Either option is a great way to use up Easter leftovers.
April 11 - Potato Chicken Broccoli Casserole
Cheesy Potato Chicken Broccoli Casserole is a hearty dish that even picky eaters will love.
You can use store-bought rotisserie chicken, slow cooker shredded chicken, or chicken breasts for this recipe.
April 12 - Asian Pork Kabobs
While I've still got a yard full of snow, grilling season is almost here which means I'm ready for these tasty Asian Pork Kabobs!
Serve with a side of rice or grilled potatoes. You might also like to add our grilled asparagus.
(These are extra delicious brushed with a little pineapple bourbon bbq sauce just before serving!)

April 13 - Mandarin Orange Salad
Everyone loves this Mandarin Orange Chicken Salad with sweet oranges, crunchy almonds, chow mein noodles, rotisserie chicken, and a honey ginger vinaigrette.
I love that it's quick and easy to make!
This salad would also be tasty with our lemon vinaigrette or orange poppy seed dressing.

I like to also serve this meal with a little extra sweet and spicy teriyaki sauce on the side.
