    What's not to love about a big hearty salad? You'll want an extra big bowl of our Buffalo Chicken Salad loaded with crumbled blue cheese, shredded carrots, thinly sliced red onions, strips of red peppers and drizzled with ranch dressing. It doesn't get much better than this!

    An easy but delicious Buffalo Chicken Salad starts with our recipe for Slow Cooker Buffalo Chicken. This is a great way to cook once, and eat several times.  I save myself a lot of time, and money, by planning out my meals  and prepping ahead of time.

    Ingredients

    • Salad greens, I prefer Romaine
    • Red Pepper (yellow or orange work also!)
    • Red Onion
    • Carrots
    • Blue Cheese Crumbles
    • Lime
    • Ranch Dressing

    Buffalo Chicken Salad

    Remove the left over slow cooker buffalo chicken salad from the refrigerator, while you prepare the vegetables for the salad.

    1. In a large serving bowl, add a 2 bunches of chopped romaine lettuce.
    2. Top with strips of red peppers, shredded carrots, thinly sliced red onions.
    3. Then, pile on the slow cooked buffalo chicken and crumbled blue cheese.
    4. Serve with ranch dressing and lime wedges.

    I like making piles of each of the toppings because it's really a beautiful way to present the Buffalo Chicken Salad. You can arrange it any way you like.
