I adore sheet pan meals because they are super easy to prep and clean up is a breeze. This recipe is easily adaptable to your family’s tastes and you can change it up by with the type of sausage, different veggies, and seasonings, too.

When it comes to busy weeknights, sheet pan meals are always in my dinner rotation!

You only need a few simple ingredients to make this sheet pan meal:

  • brussel sprouts
  • sweet potatoes
  • red onion
  • olive oil
  • fresh garlic
  • chicken apple sausages
  • kosher salt and black pepper

🔪 Instructions

  1. Line a large baking sheet with parchment paper.
  2. In a large bowl, combine the chopped vegetables with the olive oil, salt, and pepper. Toss to coat.
  3. Place the veggies onto the prepared sheet pan.
  4. Bake at 400F for 20 minutes.
  5. Toss the veggies around and add the slices of chicken sausage to the pan.
  6. Return to the oven for another 20-30 minutes until the vegetables are tender and the sausages are slightly carmelized.

To Store: Store leftovers in an airtight container for 3-4 days in the fridge. (These are my favorite airtight containers.)

To Reheat: Microwave individual portions in 30 second intervals until heated throughout.

To save time, the vegetables and sausage can all be prepped a day or two ahead of time.

📖 Variations

  • For additional flavor, try adding a little bit of one of these yummy spice mixes to the vegetables before cooking: cowboy spice mix, Italian seasoning, magic dust, Mediterranean seasoning.
  • For this recipe, you can also use fingerling or red potatoes, carrots, turnips, parsnips, beets, or rutabaga.
  • Other tasty veggies like green beans, bell peppers, cherry tomatoes, broccoli, or cauliflower, however, these vegetables don’t need as long to cook as root veggies.
  • Instead of apple chicken sausage, this recipe can be made with any sort of sausage including bratwurst or kielbasa.

🍴 Serving Suggestions

My favorite way to serve this is with a little bit of shaved parmesan cheese on top.

This sheet pan recipe truly is an all-in-one dinner! If you’re serving a large crowd, you might want to add a side salad or some dinner rolls.

Sometimes I like to serve this dinner with a little compound butter for extra flavor. Garlic chive butter, cowboy butter, or even steak butter are delicious with this meal.
