Here are the simple ingredients you will need:

  • ground Italian sausage (sweet or hot)
  • green pepper, red pepper, and yellow pepper
  • zucchini
  • grape tomatoes
  • olive oil
  • store-bought or homemade Italian seasoning
  • garlic powder
  • red pepper flakes (optional)
  • kosher salt and black pepper
  • potato gnocchi
  • fresh basil (garnish)

🔪 Instructions

  1. Add all of the ingredients except for the gnocchi to a large baking sheet. (Break up the ground sausage into small pieces).
  2. Toss to coat and evenly distribute the seasonings.
  3. Bake at 425F for 20-25 minutes until the sausage is cooked and the vegetables are tender.
  4. Cook the gnocchi according to the instructions on the package.
  5. Place the gnocchi onto the baking sheet with the sausage and vegetables.
  6. Broil for 3-5 minutes.

🍲 Storage

To Store: Store your sausage and baked gnocchi dinner in an airtight container in the fridge for 3-4 days. (These are my favorite airtight containers.)

To Reheat: Microwave individual portions in 30 second intervals until heated throughout.

📖 Variations

The first time you try any new recipe we recommend that you make it just as it is written on the recipe card since that is how the recipe has been tested. However, the next time you make our recipe, you might want to try one of these ideas:

  • Instead of ground Italian sausage, you could also use Italian sausage links, kielbasa, chicken sausage, turkey sausage, or bratwurst if you prefer. This recipe can also be made with ground beef, ground chicken, or ground turkey.
  • If you prefer, you place only the vegetables in the oven and can brown the sausage in a skillet over medium-high heat and use paper towels to remove excess grease.
  • Instead of Italian seasoning, try this recipe with our yummy Mediterranean seasoning.
  • Diced summer sausage, mushrooms, and sliced red onion are all delicious with this meal. You could also add baby spinach, cauliflower, or green beans
  • For extra flavor, add sliced elephant garlic when you add the cooked gnocchi to the sheet pan.
  • To make a creamy sauce, add 2 cups of tomato sauce with 1/2 cup heavy cream in a large skillet. Warm through then add the sausage, vegetables, and gnocchi. Toss to coat and top with mozzarella cheese.

🍴 Serving Suggestions

Sometimes I add a little bit of grated parmesan cheese on top before serving. It’s also really tasty with fresh mozzarella on top.

Serve with a light green salad and Italian breadsticks, cheesy garlic herb bombs, or buttery herb dinner rolls. It’s also delicious with garlic bread.
