Here is what you need to make this cheesy chicken broccoli potato casserole:

  • Red potatoes (cut into 1-inch pieces)
  • Butter (room temperature)
  • Sour cream – for extra creaminess
  • Bite-size broccoli florets (fresh or frozen)
  • Cooked chopped chicken – you can use chicken breasts or thighs, rotisserie chicken, etc.
  • Bacon cooked and crumbled
  • Shredded cheddar cheese
  • Seasonings: kosher salt, freshly ground black pepper, garlic powder, onion powder, paprika
  • Green onions, for garnish (optional)

🔪 Instructions

  1. Cook the broccoli and prepare the potatoes.
  2. Mix together the cooked broccoli, the chicken, the bacon, and 1 cup of cheese in the pot or a large bowl.
  3. Transfer the mixture to a greased baking dish.
  4. Sprinkle the remaining cheese to the top.
  5. Bake at 350°F for 30-35 minutes or until the cheese has melted and the casserole is heated.

To Store: Leftover Potato Chicken Broccoli Casserole will keep for 4-5 days in an airtight container in the refrigerator. (These are my favorite airtight containers.)

To Reheat: Microwave individual portions in 30-second intervals until heated throughout.

✏️ Make Ahead & Time Saving Tips

Chicken and broccoli mashed potato casserole is an easy dinner with a few shortcuts that will save you time. One of my favorite things about casseroles is that they’re just a bunch of components thrown together, and a lot of those individual elements like the chicken and mashed potatoes can be made ahead of time or batch cooked to make future meals easier.

Use leftover pulled chicken or shredded rotisserie chicken. I like throwing the chicken in the crockpot in the morning, then it’s hot and ready when I want to use it. I usually make enough for two different recipes.

If you’re making mashed potatoes, make twice as much as save some. It’s a huge time saver to be able to just pull it out of the fridge! You can use leftover cheesy mashed potatoes or red skin potatoes in this casserole recipe and just add the additional seasonings to suit your tastes.

Ingredients

  • 2 1/2 pounds Red potatoes cut into 1-inch pieces
  • 4 tablespoons Butter room temperature
  • 1 cup Sour cream
  • ½ – 1 teaspoon Kosher salt
  • ½ teaspoon Freshly ground black pepper

Instructions

  • Preheat oven to 350°F.
  • Grease the baking dish with butter or cooking spray.
  • Add your potatoes to a large pot and cover with water.
    2 1/2 pounds Red potatoes
  • Bring the water to a boil and cook them until fork tender, about 10-15 minutes.
  • While the potatoes are boiling, roast or steam the broccoli until hot but barely softened.
    3 cups Bite-size broccoli florets
  • Drain any liquid from the broccoli.
  • Cook the bacon.
    4 slices Bacon cooked and crumbled
  • Chop or crumble bacon and set aside.
  • Drain the potatoes and transfer them back to the hot pot.
  • Place the pot back over a warm, but turned-off, burner or on the lowest heat seating possible.
  • Smash the potatoes using a potato masher.
  • Add butter, sour cream, and seasonings to the pot and stir to combine.
    4 tablespoons Butter, 1 cup Sour cream, ½ – 1 teaspoon Kosher salt, ½ teaspoon Freshly ground black pepper, ½ teaspoon Garlic powder, ½ teaspoon Onion powder, ½ teaspoon Paprika
  • Next, add the cooked broccoli, the chicken, the bacon, and 1 cup of cheese to the pot.
    4 cups Cooked chopped chicken, 2 cups Shredded cheddar cheese
  • Stir to combine and transfer to your prepared baking dish.
  • Add the remaining cheese to the top.

  • Bake uncovered for 30-35 minutes or until the cheese has melted and the casserole is heated though.
