Potato chicken broccoli casserole is a fabulous meal for busy weeknights. This complete meal with creamy mashed potatoes, broccoli, tender chicken, and crispy bacon is cheesy comfort food at its best.

Casseroles are just good old fashion comfort food for a reason! Not only is this an easy recipe, but it's a delicious meal for the whole family.
This Chicken potato broccoli casserole can be made with red potatoes, sweet potatoes, or a combination of both.
If you have to make all the elements of this casserole, it's a little bit time-consuming. However, I have some time-saving tips for you so be sure to read through the post.

Here is what you need to make this cheesy chicken broccoli potato casserole:
- Red potatoes (cut into 1-inch pieces)
- Butter (room temperature)
- Sour cream
- Kosher salt
- Freshly ground black pepper
- Garlic powder
- Onion powder
- Paprika
- Bite-size broccoli florets
- Cooked chopped chicken
- Bacon cooked and crumbled
- Shredded cheddar cheese
- Green onions, for garnish (optional)

🔪 Instructions
- Preheat oven to 350°F.
- Grease the baking dish with butter or cooking spray.
- Add your potatoes to a large pot and cover with water.
- Bring the water to a boil and cook until fork tender, about 10-15 minutes.
- While the potatoes are boiling, roast or steam the broccoli until hot but barely softened.
- Drain any liquid from the broccoli.
- Cook the bacon.
- Chop or crumble bacon and set aside.
- Drain the potatoes and transfer them back to the hot pot.
- Place the pot back over a warm, but turned-off, burner or on the lowest heat seating possible.
- Smash the potatoes using a potato masher.
- Add butter, sour cream, salt, pepper, garlic, and paprika to the pot and stir to combine.
- Next, add the cooked broccoli, the chicken, the bacon, and 1 cup of cheese to the pot.
- Stir to combine and transfer to your prepared baking dish.
- Add the remaining cheese to the top.
- Bake for 30-35 minutes or until the cheese has melted and the casserole is heated.

To Store: Leftover Potato Chicken Broccoli Casserole will keep for 4-5 days in an airtight container in the fridge. (These are my favorite airtight containers.)
To Reheat: Microwave individual portions in 30-second intervals until heated throughout.
✏️ Make Ahead
Chicken and broccoli mashed potato casserole is an easy dinner with a few shortcuts that will save you time. One of my favorite things about casseroles is that they're just a bunch of components thrown together, and a lot of those individual elements like the chicken and mashed potatoes can be made ahead of time or batch cooked to make future meals easier.
Use leftover pulled chicken or shredded rotisserie chicken. I like throwing the chicken in the crockpot in the morning, then it's hot and ready when I want to use it. If you're making mashed potatoes, make twice as much as save some. It's a huge time saver to be able to just pull it out of the fridge! You can use leftover cheesy mashed potatoes or red skin potatoes in this casserole recipe and just add the additional seasonings to suit your tastes.
