✔️ Slice the potatoes into pieces that are uniform. This ensures they cook evenly. The smaller the pieces, the more quickly they will cook.

    Storage & Reheating

    To Store: Leftover hamburger casserole should be stored in the fridge in an airtight container. It will keep for 4-5 days. (These are my favorite airtight containers.)

    To Reheat: Microwave individual portions in 30-second intervals until heated throughout.

    To Freeze: Assemble the casserole and make sure it’s completely cooled. Cover with aluminum foil and then slide into a 2-gallon freezer bag. Label and store for up to 6 months.

    To Thaw: Allow the casserole to thaw overnight in the fridge before baking. You will most likely need to adjust the baking time.

    Make Ahead

    I like to cook ground beef ahead of time in big batches and then freeze it for use later. This saves me a ton of time in all sorts of recipes including my ground beef cheese dip, layered taco dip, and taco stuffed shells.

    Variations

    The first time you try any new recipe we recommend that you make it just as it is written on the recipe card since that is how the potato and hamburger casserole recipe has been tested. However, the next time you make our recipe, you might want to try one of these ideas:

    • Any sort of cream soup will work in this recipe including cream of mushroom soup, cream of celery soup, or cream of potato soup.
    • You could add a cup or two of frozen vegetables. I like a mixture of carrots, peas, corn, and green beans. Broccoli florets would be good, too.
    • Instead of regular potatoes, use sweet potatoes.
    • This casserole could also be made with shredded beef. In a pinch, you could even make it with ground chicken or ground pork.
    • For additional flavor, you can add your favorite herbs like rosemary, thyme, or tarragon. You could also add a dash of hot sauce or a pinch of chili powder.

    Ingredients

    Instructions

    • Preheat the oven to 350F.
    • Lightly spray a 9×13 casserole dish with cooking spray. Set aside.
    • In a large stock pot, boil the potatoes until they are fork-tender. Drain and set aside.
      5 small potatoes
    • Cook the diced onions and brown the ground beef in a large skillet over medium-high heat. Drain the excess grease and set aside.
      2 lbs lean ground beef, 1 small onion
    • Season the ground beef mixture.
      2 tablespoons Worcestershire sauce, 1 teaspoon garlic powder, kosher salt and black pepper
    • In a large bowl, whisk together the cream soup and milk.
      2 cans of cream soup, or 4 cups homemade Cream Soup Substitute, 1½ cups milk
    • Into the prepared baking dish, add half of the cooked ground beef mixture, then half the cooked potatoes and pour half of the soup mixture on top. Add half of the cheese on top of the potatoes.
      Repeat with the remaining ingredients.
      1½ cups of shredded cheese
    • Cook at 350F for 30 minutes until the cheese is melted and the casserole is bubbly.
