For me, weeknight dinners need to be done in an hour or less, and 30 minute meals are my favorite. The exception to this is when I can prep a recipe in 15 minutes and then pop it in the oven to bake like this cowboy cornbread casserole recipe. (Or slow cooker meals, I love those, too!)

This is one of my favorite recipes because it’s easy, full of flavor, and I usually have most of the ingredients on hand.

🧂 Ingredients

  • store-bought or homemade taco seasoning
  • Jiffy corn muffin mix, plus eggs and milk
  • lean ground beef
  • diced tomatoes and chilies (such as Rotel)
  • corn kernels
  • pinto beans
  • shredded Mexican cheese

🔪 Instructions

  1. Prepare the cornbread according to the instructions on the box.
  2. Brown the ground beef and season with taco mix.
  3. Mix in the additional casserole ingredients and simmer for 5 minutes.
  4. Add the cornbread mixture to a greased baking dish.
  5. Cover and bake for 40 minutes at 425F.

Slow Cooker Method

Here’s how to make this hearty cowboy cornbread casserole in your slow cooker.

  1. Spray the crock of your slow cooker with cooking spray.
  2. Brown ground beef and drain the grease.
  3. In a large bowl, make the cornbread batter.
  4. Add the tomatoes and other remaining ingredients to the beef and then mix in the cornbread batter.
  5. Transfer the casserole mixture into the prepared crockpot.
  6. Cook on HIGH for 2.5-3 hours until the casserole is cooked.

🍲 Storage

To Store: Leftover Cowboy Cornbread Casserole should be stored in an airtight container in the fridge. It will last 3-4 days. (These are my favorite airtight containers.)

To Reheat: Microwave individual portions in 30 second intervals until heated throughout.

📖 Variations

The first time you try any new recipe we recommend that you make it just as it is written on the recipe card since that is how the recipe has been tested. However, the next time you make our recipe, you might want to try one of these ideas:

  • Swap out the pinto beans for a can of black beans or kidney beans if you prefer.
  • For a spicy kick, add a little bit of chili powder or use the spicy Rotel tomatoes.
  • If you don’t have a Mexican cheese blend on hand, substitute shredded cheddar cheese.
  • Looking to add more nutrition? Mix in 1 cup of diced green or red bell peppers, chopped baby spinach, or
  • This recipe can also be made with ground chicken, ground turkey or even ground pork.
  • Instead of taco seasoning, use our cowboy seasoning mix.

🍴 Serving Suggestions

You can see I’m topping mine with fresh veggies including avocado, tomatoes, olives, and cheese. This is also delicious with a dollop of sour cream, pico de gallo, scoop of homemade guacamole, cowboy caviar even a drizzle of enchilada sauce.

Ingredients

  • 2 8.5oz boxes Jiffy cornbread mix
  • 2 eggs
  • cup milk
  • 1-2 pounds ground beef
  • 10 ounces can diced tomatoes w/ diced chilies
  • 15.25 ounces corn kernels drained
  • 16 ounces can pinto beans not drained
  • 1 cup Mexican blend shredded cheese
  • 2 tablespoons taco seasoning or 1 packet
  • toppings such as avocado, diced tomatoes, sour cream, pico de gallo, etc, as desired

Instructions

  • Preheat oven to 425F. Lightly grease a baking dish and set it aside.
  • In a large mixing bowl, prepare the cornbread according to the package directions. Set aside.
    2 8.5oz boxes Jiffy cornbread mix, 2 eggs, ⅔ cup milk
  • Brown the ground beef over medium-high heat and drain excess grease.
    1-2 pounds ground beef
  • Combine the rest of the casserole ingredients with the cooked ground beef and simmer for 5 minutes.
    10 ounces can diced tomatoes w/ diced chilies, 15.25 ounces corn kernels, 16 ounces can pinto beans, 1 cup Mexican blend shredded cheese, 2 tablespoons taco seasoning
  • Add the ground beef mixture to the cornbread batter and stir until fully combined.
  • Pour the cornbread and beef mixture into the prepared baking dish.
  • Cover with aluminum foil and place in the preheated oven to cook for 40 minutes or until a toothpick comes out of the center clean. If needed, remove the foil for the last 5-10 minutes and cook until golden brown.
  • Serve warm with desired toppings.
