There's something about a cheesy dish with bacon and cream cheese that just screams comfort food. This creamy corn casserole is the perfect side dish to complete any delicious meal.
Our Cowboy Seasoning is a combination of chili powder, cumin, ground coffee, paprika, brown sugar, dry mustard, coriander, cayenne pepper, salt and black pepper that lends a slightly sweet, but smoky, spicy flavor to the casserole.
Unlike cowboy cornbread casserole, this does not have pinto beans, ground beef or a cornbread mixture on top. (But don't worry, that tasty recipe will be coming soon!) This cowboy casserole recipe is strickly a side dish.

🔪 Instructions
- Preheat the oven to 350°F.
- In a large bowl, whisk cream cheese, milk, flour, and cowboy seasoning mix until combined.
- Fold in corn, 2 ½ cups shredded cheese, and season with salt and pepper.
- Sprinkle the remaining cheese and cooked bacon on top of the casserole and bake for 20 minutes until it is golden brown on top.
- Let cool for 5 minutes, then garnish with chives.
- Serve hot.

Be sure to use whole kernels of corn and not cream corn or the dish will be too soupy.

To Store: Store leftovers in an airtight container in the fridge for 3-4 days. (These are my favorite airtight containers.)
To Reheat: Reheat individual portions in the microwave.
Slow Cooker Instructions
This crockpot method is super easy and a great way to keep your cowboy casserole warm for potlucks and parties.
- Add a light coating of cooking spray to the crock of the slow cooker.
- Prepare the corn mixture as per instructions, and transfer for the slow cooker.
- Cook on low for 4 hours or on high for 2 hours.
- Top with bacon just before serving so that it stays crispy.
Grilling Instructions
- Prepare the casserole and transfer the mixture into an aluminum foil baking pan and cover with tinfoil.
- Cook at 350°F on indirect heat for 20 minutes.
- Allow the corn and bacon casserole to sit 5 minutes before serving.
📖 Variations
The first time you try any new recipe we recommend that you make it just as it is written on the recipe card since that is how the bacon corn casserole recipe has been tested. However, the next time you make our recipe, you might want to try one of these ideas:
- Add a 15oz can of Rotel tomatoes and chilies to the corn casserole before baking.
- For a spicy casserole, add 1 finely minced jalapeno to the corn mixture before baking.
- Substitute taco seasoning for the Cowboy Seasoning, or add a touch more of your favorite seasoning like onion powder, garlic powder, or chili powder.
- If it's in season, use fresh corn instead of frozen.
- Substitute sour cream for the cream cheese.
- Add a single layer of tater tots on top of the corn mixture. Allow the casserole to cook for 15 minutes before adding the extra cheese and bacon on top.
- Add a can of black beans to the corn mixture for a more hearty dish.

🍴 Serving Suggestions
My husband absolutely loves adding a little squeeze of lime to his corn casserole, and my mom adds a little bit of butter. (She adds butter to everything!)
