Summertime means time for grilling for us, and these grilled chicken kabobs are so easy! Just add your favorite grilled fruits and veggies and you’ll have dinner for a crowd.

I love the zesty flavor of combining green onions, lime juice, and red pepper flake. There’s nothing exotic here, just pantry staples that are easily acquired, but they still pack a delicious punch.

Once I learned how to grill chicken kabobs, I was able to play around with different ingredients and flavor profiles and these yummy kabobs were the result. Food research is the best kind of research, isn’t it? I know you’ll love them.

Ingredients

  • boneless skinless chicken breast or thighs 
  • soy sauce
  • olive oil
  • lime juice – I like using fresh limes but bottled will work in a punch
  • brown sugar
  • seasonings: ground ginger, crushed red pepper flakes, fresh garlic, kosher salt, black pepper
  • green onions

Variations

The first time you try any new recipe, we recommend that you make it just as it is written on the recipe card, since that is how the chicken kebabs recipe has been tested. However, the next time you make our recipe, you might want to try one of these ideas:

  • Substitute lemon juice for the lime juice.
  • Just before the chicken is done, brush the, with barbecue sauce.

Ingredients

  • 1 pound boneless skinless chicken breast or thighs
  • 1 tablespoon olive oil
  • ½ cup soy sauce
  • ¼ cup green onions chopped thinly
  • ¼ cup lime juice fresh or bottled
  • 2 tablespoons brown sugar
  • 1 teaspoon ground ginger
  • ¼ teaspoon crushed red pepper flakes
  • 1 large garlic clove minced
  • 1/2 teaspoon kosher salt
  • 1 teaspoon black pepper

Instructions

  • Cut the chicken into bite-sized pieces. Season with salt and pepper.

  • Combine all the marinade ingredients in a bowl and whisk until well combined.

  • Add seasoned chicken to marinade.
  • Cover with plastic wrap and chill 1 hour, up to overnight.
  • Carefully thread the chicken onto the skewers. Discard leftover marinade.
  • Heat grill to medium high.
  • Place chicken on the grill and cook over medium coals 4-6 minutes or until browned.
  • Turn chicken and continue grilling for 4-6 minutes.
  • Remove from grill when browned and serve immediately.
