Cut the chicken into bite-sized pieces. Season with salt and pepper.
1 pound boneless skinless chicken breast or thighs, ½ teaspoon kosher salt, 1 teaspoon black pepper
Combine all the marinade ingredients in a bowl and whisk until well combined.
1 tablespoon olive oil, ½ cup soy sauce, ¼ cup green onions, ¼ cup lime juice, 2 tablespoons brown sugar, 1 teaspoon ground ginger, ¼ teaspoon crushed red pepper flakes, 1 large garlic clove
Add seasoned chicken to marinade.
Cover with plastic wrap and chill 1 hour, up to overnight.
Carefully thread the chicken onto the skewers. Discard leftover marinade.
Heat grill to medium high.
Place chicken on the grill and cook over medium coals 4-6 minutes or until browned.
Turn chicken and continue grilling for 4-6 minutes.
Remove from grill when browned and serve immediately.
