I’m a big fan of simple recipes and this Rotisserie Chicken Salad fits the bill! It’s similar to classic chicken salad with creamy mayonnaise and crisp celery, but uses store-bought rotisserie chicken or slow cooker shredded chicken to save time.

My grandmother loved chicken salad and had it all the time for a quick lunch. This is a riff on her classic recipe. I add a few other ingredients like chopped pecans which add great texture and flavor to the chicken salad.

Whether you serve this tasty chicken salad on a warm croissant, on a bed of lettuce (great option for low carb), or as an appetizer with crackers, you’re going to love this easy and flavorful recipe.

📖 Variations

The first time you try any new recipe we recommend that you make it just as it is written on the recipe card since that is how the recipe has been tested. However, the next time you make our recipe, you might want to try one of these ideas:

  • Substitute sour cream for mayo, or for a lighter version, use plain Greek yogurt.
  • If you love hard-boiled eggs in your chicken salad, add 2-3 chopped eggs to the salad mixture.
  • For a little bite, add 1/2 cup of finely diced red onion. Other items you can add for extra flavor include garlic powder, paprika, dijon mustard, dried cranberries, fresh herbs, or finely diced red bell pepper.
  • Sometimes I add chopped apples or halved grapes for a little sweetness.
  • My husband loves his chicken salad sandwiches with sliced black olives.
  • If you’re not a fan of pecans, you can use other nuts like walnuts or almonds, or just leave them out.

🍴 Serving Suggestions

Chicken salad is a wonderfully versatile recipe. Here are some of the ways I serve it:

Entertaining: This easy chicken salad recipe is perfect for a bridal shower, baby shower, or other family gathering. Serve with crackers on the side. It’s a great addition to antipasto skewers and puff pastry bacon twists.

Meal Prep: A batch of this creamy rotisserie chicken salad is also great for busy families on the go. Make a large batch for lunches all week long! You can make a sandwich with cheddar cheese, a salad with cherry tomatoes and other fresh veggies, or a fun lettuce wrap for a quick meal anytime.

For a heartier meal, pair with tomato basil soup or creamy potato soup.
