I’m a big fan of simple recipes, and this Rotisserie Chicken Salad fits the bill! It’s similar to classic chicken salad with creamy mayonnaise and crisp celery, but uses store-bought rotisserie chicken or slow cooker shredded chicken to save time.

My grandmother loved chicken salad and had it all the time for a quick lunch. This is a riff on her classic recipe. I add a few other ingredients like chopped pecans, which add great texture and flavor to the chicken salad.

This is one of my favorite cold dinner ideas when it’s just too hot to cook. Whether you serve this tasty chicken salad on a warm croissant, on a bed of lettuce (a great option for low carb), or as an appetizer with crackers, you’re going to love this easy and flavorful recipe.

Here is what you will need to make our Rotisserie Chicken Salad recipe:

  • Chicken: This is the star of the recipe, of course, and using rotisserie chicken, or pre-cooked slow-cooker pulled chicken, makes it super quick and easy. (Leftover turkey works great, too.)
  • Celery: Celery adds fresh crunch and helps balance the creamy texture of the dressing. If you like extra crunch, feel free to add a little more.
  • Mayonnaise: This is the creamy base for the dressing. You can substitute sour cream for mayo, or use plain Greek yogurt for a lighter version.
  • Sweet Relish: Sweet relish adds a tangy sweetness, giving this chicken salad a classic deli-style flavor. Dill relish or chopped pickles also work well.
  • Seasonings: Celery salt gives a subtle, savory flavor and enhances the celery’s freshness. A little goes a long way here. Salt and pepper help bring all the flavors together and keep the salad from tasting flat. Freshly cracked black pepper adds extra flavor. Onion powder adds savory flavor without overpowering the salad. For more bite, add finely diced red onion or green onions too.
  • Pecans: These are optional but add buttery crunch and a little richness to the chicken salad. You can also use walnuts or almonds, or leave the nuts out completely.

Variations and Add-Ins

  • Add 2 to 3 chopped hard-boiled eggs for extra protein.
  • Stir in finely diced red onion for a little bite and crunch.
  • Add garlic powder, paprika, Dijon mustard, fresh herbs, or diced red bell pepper for extra flavor.
  • Chopped apples, dried cranberries, or halved grapes add a delicious touch of sweetness.
Step-by-step Rotisserie Chicken Salad recipe: 1. Shredded rotisserie chicken, chopped celery, and pecans on a cutting board. 2. Ingredients added to a bowl. 3. Mixture stirred with mayo until creamy and combined.
