If you want a quick, tasty meal that’s easy on your budget, try these tuna boats. Crunchy cucumbers and creamy tuna salad make every bite satisfying. They work for lunch, snacks, or as a nice appetizer for guests. This is a great meal prep lunch, too.
These tuna boats show that simple ingredients can make a tasty meal. They are quick, affordable, low carb, and work for anything from weekday lunches to party platters.

- Tuna Salad: This is the main part of the recipe, of course. My tuna salad has mayo, finely chopped celery, celery salt, black pepper, and a bit of minced red onion. You can also use chicken salad instead of tuna.
- English Cucumbers: These have thin skin, very few seeds, and a nice crunch that stays crisp after filling. Since they are longer and straighter than regular cucumbers, they look great when serving guests. Persian cucumbers, which are shorter, are great for meal prep.
- Fresh Dill: This herb adds a bright, fresh flavor, and you only need a little. Sprinkle it on top for a nice finish. If you don’t have dill, you can use parsley, cilantro, or basil for a different taste.
Recipe Variations:
You can easily customize these tuna boats. Add sliced cherry tomatoes or everything bagel seasoning for more flavor. However you serve them, this simple recipe delivers plenty of flavor with very little effort.

Storage
To Store: Keep any leftover tuna salad in an airtight container in the fridge, where it will keep for up to 3 days. (These are my favorite airtight containers.)
If you have already made the tuna boats, eat the leftovers within 24 hours. The cucumbers will slowly release moisture and get softer over time.

Make Ahead
Tuna boats are great for meal prep, but for the best texture, store the cucumbers separately from the tuna salad. I love these containers for meal prep. You can make the tuna salad up to 3 days ahead and keep it in an airtight container in the fridge. Wash and cut the cucumbers ahead of time, then store them in another container lined with a paper towel to absorb excess moisture. When you are ready to serve, fill each cucumber boat with tuna salad and top with fresh dill.

Ingredients
- 2 5- ounce cans solid white tuna drained
- 1/3 cup mayonnaise you can add more or less depending on your preference
- 1 stalk fresh celery diced
- 1-2 tablespoons red onion diced fine
- 1 teaspoon celery salt
- 1-2 tablespoons fresh dill or other fresh herbs such as parsley, chives, basil, or even cilantro.
- kosher salt to taste
- black pepper to taste
- 2 English cucumbers
Instructions
- In a small bowl, combine all the tuna salad ingredients and mix to combine.2 5- ounce cans solid white tuna, 1/3 cup mayonnaise, 1 stalk fresh celery, 1-2 tablespoons red onion, 1 teaspoon celery salt, 1-2 tablespoons fresh dill, kosher salt, black pepper
- Trim the ends of the cucumbers, if desired, then cut the cucumbers lengthwise. Use a spoon to scoop out the seeds and make a place for the tuna salad.2 English cucumbers
