Dry Ingredient Swaps for Baking
Baking Powder Substitution: 1 teaspoon baking soda plus ½ teaspoon cream of tartar is equal to 1 teaspoon of baking powder.
Baking Soda Substitution: Replace 1 teaspoon of baking soda with 2 teaspoons baking powder.
Cornstarch Substitution: 1 tablespoon cornstarch can be substituted with 2 tablespoons of flour.
Brown Sugar Substitution: replace 1 cup of brown sugar with 1 cup of white sugar plus ¼ cup of molasses (and reduce the liquids in the recipe by ¼ cup).
White Sugar Substitution: 1 cup of brown sugar OR 1 cup of powdered sugar.
Cake Flour Substitution: 1 cup of cake flour can be replaced by ¾ cup of all-purpose flour plus 2 tablespoons cornstarch.
Self-Rising Flour Substitution: 1 cup of self-rising flour can be substituted for 1 cup of all-purpose flour plus 1 teaspoon baking powder and ½ teaspoon baking soda.
Egg Substitutes
- 1 egg = ½ cup almond butter
- 1 egg = ¼ cup applesauce
- 1 egg = 3 tablespoon aquafaba
- 1 egg = ¼ cup mashed banana
- 1 egg = 2 ½ tablespoon canned coconut milk + 1 teaspoon baking powder
- 1 egg = 1 tablespoon flaxseed + ¼ cup water
- 1 egg = 1 tablespoon chia seed + ¼ cup water
- 1 egg = ¼ cup prune puree
Liquid Substitution Swaps for Baking
Vegetable Oil Substitution: Oil can be replaced 1:1 for applesauce in baking recipes.
Buttermilk Substitution: For 1 cup buttermilk, substitute 1 cup whole milk with 1 teaspoon lemon juice OR vinegar. Allow the mixture to rest 5 minutes before using.
Heavy Cream Substitution: For 1 cup heavy cream, substitute ¾ cup whole milk plus ⅓ cup melted butter.
Half and Half Substitution: For 1 cup half and half melt 1 tablespoon of butter then add milk to make 1 cup of liquid.
Whole Milk Substitution: Replace 1 cup of whole milk with ½ cup evaporated milk and ½ cup water.
Alternative: 1 cup of whole milk can be replaced with 1 cup of skim milk plus 2 tablespoons of melted butter.
Sour Cream Substitution: Sour cream can be replaced 1:1 for yogurt when baking.
Mayonnaise Substitution: Mayo can be replaced 1:1 for sour cream or plain yogurt.
Butter Substitution: Butter can be substituted 1:1 for margarine.
Corn Syrup Substitution: Replace corn syrup 1:1 with honey.
Alternative: Replace 1 cup corn syrup with 1-¼ cup white sugar plus ⅓ cup of water.
