Fresh watermelon is a summertime must-have at our house. No one can resist a slice or juicy chunks out in the backyard on a hot summer night. If you had asked me to pair it with cheese a few years ago I might have looked at you strangely. The truth is though, Feta cheese pairs so well with the juicy summer fruit that it too, has become a summer staple at our house.

My watermelon salad recipe is the best. How can I be humble when I know just how much you’ll love the bright summer flavors of fruits, veggies, herbs, and creamy Feta cheese?

It comes together in just 15 minutes and if you love chopped salads, this will become your newest go-to side dish. I just know it.

🧂Ingredients

  • Watermelon, cubed 
  • English Cucumber, diced 
  • Red onion, thinly sliced
  • Fresh mint, thinly sliced 
  • Fresh lime juice
  • Kosher salt
  • Pepper 
  • Feta cheese

🔪Instructions

  1. Using a large mixing bowl, gently toss together watermelon, cucumbers, onions, and mint
  2. In a small mixing bowl, whisk together the olive oil, lime juice, salt, and pepper
  3. Pour dressing over the combined fruits and vegetables
  4. Top with the Feta
  5. Serve immediately
