As a bonus, all these ingredients should be available at your local grocery store.

With Memorial Day coming up, I’ve been looking for a dessert that would be as American as apple pie, but I wanted to shake things up a bit. This year, I’ll be serving these simple Cherry Pie Bars instead.

Did I mention these easy cherry bars feed a crowd? Each batch makes between 18 and 24 bars. Even if you can’t have a large celebration this year, they would make a great neighbor gift or front porch surprise for the family. Cherry lovers will love these dessert bars!

Ingredients

You only need a few simple ingredients for these easy cherry pie bars.

  • Unsalted butter
  • White granulated sugar
  • Large Eggs
  • Pure vanilla extract
  • All-purpose flour
  • Salt
  • Canned cherry pie filling
  • Powdered sugar (confectioner’s sugar)
  • Milk or cream

This delicious dessert is as good as a traditional pie, but because it’s in bar form, it’s ideal for picnics, potlucks, and bake sales!

Storage

Leftover cherry pie bars should be stored in an airtight container for 3-5 days. These are some of my favorite airtight containers.

You can freeze these bars later by wrapping them in wax paper or aluminum foil and sliding them into a freezer bag. Label and store in the freezer for 2 months.

Thaw in the fridge overnight.

Ang’s Tips

  • If you want the glaze to be bright white, use clear vanilla extract. Regular vanilla extract will give your glaze a slight tan pigment.
  • Room-temperature eggs will be incorporated into the batter more easily. Take them out about 30 minutes before you want to use them, along with the butter.

Variations

These bars can be made with any fruit pie filling. Next time you make them, swap out the cherry for blueberry, strawberry, peach, or apple.

For a lemon glaze, omit the vanilla extract and milk and replace it with 2-3 tablespoons of lemon juice. You can do the same thing with a little almond extract for an almond glaze. (The flavor of almonds with sweet cherries is so good!)

Serving Suggestions

I like cherry pie filling bars as is with the glaze, but you can also serve them with a scoop of vanilla ice cream. They would be delicious with almond whipped cream, too.

Ingredients

Cookies Base

  • 1 cup unsalted butter, softened
  • 2 cups white granulated sugar
  • 4 eggs room temperature
  • 1 teaspoon pure vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 2 cans 21 oz cherry pie filling

Glaze

  • 1 cup powdered sugar
  • 2-3 tablespoons milk or cream
  • 1/4 teaspoon vanilla extract

Instructions

  • Preheat oven to 350 degrees.
  • Spray 13×9 or similar baking pan with non-stick cooking spray.
  • In a large bowl, cream butter and sugar.
    1 cup unsalted butter, softened, 2 cups white granulated sugar
  • Add eggs, one at a time, beating well after each addition.
    4 eggs
  • Stir in vanilla.
    1 teaspoon pure vanilla extract
  • In a small bowl, combine flour and salt.
    3 cups all-purpose flour, 1 teaspoon salt
  • Add to creamed mixture.
  • Evenly spread about 3 cups of dough into baking pan.
  • Spread pie filling over batter evenly.
    2 cans
  • Drop remaining batter by teaspoon over the top.
  • Bake for 30 – 35 minutes or until a toothpick inserted in the center comes out clean.
  • Cool on rack.
  • Combine ingredients for Glaze – NOTE: if you add the vanilla the glaze is a bit darker, if you want the glaze to be bright white, use clear vanilla extract.
    1 cup powdered sugar, 2-3 tablespoons milk or cream, 1/4 teaspoon vanilla extract
  • Drizzle over bars.
  • Cut and serve.
