This Cherry Pie Bars Recipe will impress guests, but they are so easy to make – the perfect mixture of tart and sweet.

Cherry Pie Bars Recipe

With Memorial Day coming up, I’ve been looking for a dessert that would be as American as apple pie, but I wanted to shake things up a bit. This year, I’ll be serving these simple Cherry Pie Bars instead.

They look impressive, but they couldn’t be easier to make. You know I love a good, simple dessert. As a bonus, all of the ingredients should be available at your local grocery store.

Did I mention they feed a crowd? Each batch makes between 18 and 24 bars. Even if you can’t have a large celebration this year, they would make a great neighbor gift or front porch surprise for the family.

You really can’t lose with this dessert!

Shopping List

  • Unsalted butter
  • White granulated sugar
  • Eggs
  • Pure vanilla extract
  • All-purpose flour
  • Salt
  • Cherry pie filling
  • Powdered sugar
  • Milk or cream

How to Make Cherry Pie Bars

  1. Preheat oven to 350 degrees
  2. Spray 15x10x1 baking pan with non-stick cooking spray
  3. In a large bowl, cream butter and sugar
  4. Add eggs, one at a time, beating well after each addition
  5. Stir in vanilla
  6. In a small bowl, combine flour and salt
  7. Add to creamed mixture
  8. Evenly spread about 3 cups of dough into baking pan
  9. Spread pie filling over batter evenly
  10. Drop remaining batter by teaspoon over the top
  11. Bake for 30 – 35 minutes or until a toothpick inserted in the center comes out clean
  12. Cool on rack
  13. Combine ingredients for glaze – NOTE: if you add the vanilla the glaze is a bit darker, if you want the glaze to be bright white, use clear vanilla extract
  14. Drizzle over bars
  15. Cut and serve

Ingredients

Cookies Base

  • 1 cup 2 sticks unsalted butter, softened
  • 2 cups white granulated sugar
  • 4 eggs room temperature
  • 1 teaspoon pure vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 2 cans 21 oz cherry pie filling

Glaze

  • 1 cup powdered sugar
  • 2-3 tablespoons milk or cream
  • 1/4 teaspoon vanilla extract

Instructions
