Summer desserts are almost always best cold. My Strawberry Cheesecake Bars are a delicious, and refreshing summer dessert and the fact that they're no bake means you aren't heating up your kitchen either!
I love easy recipes that feed a crowd and this one, well it fits that bill perfectly. If you love strawberries or cheesecake, you will absolutely love these yummy bars. The combination of sweet and tart is simply scrumptious, and the chill will help you cool down on humid summer nights.

- strawberries
- powdered sugar
- butter
- cream cheese
- vanilla extract
- fresh strawberries

🔪Instructions
To make the crust:
- Spray and line an 8x8 baking pan.
- Combine the graham cracker crumbs, powdered sugar, and melted butter. Stir until well combined.
- Press the crust mixture into the bottom of your 8x8 baking pan.
- Freeze the crust for 10-12 minutes.
To make the cheesecake:
- Roughly chop the strawberries and place them in a microwave-safe bowl.
- Microwave the strawberries for 25-30 seconds until warm and then mash them with a fork for about 30 seconds.
- Transfer the mashed strawberries to a fine-mesh strainer and press the strawberries into the strainer allowing the juice to drip into a bowl below. This should make 3 to 4 tablespoons of strawberry juice. Discard strawberry pulp and seeds.
- Using a stand mixer, cream together the cream cheese, and vanilla, adding 1 cup powdered sugar slowly on medium speed until smooth. Pour in strawberry juice and mix just until combined.
- Spread the cream cheese mixture evenly on top of the graham cracker crust and freeze.
- Once frozen, transfer the cheesecake onto a cutting board, and cut into squares.
- Garnish with a fresh strawberry slice, best served immediately.

Instead of strawberries, you can make this no bake cheesecake bars recipe with other berries or cherries, following the same steps.
- Roughly chop the berries or cherries and place them in a microwave-safe bowl.
- Microwave the fruit for 25-30 seconds until warm and then mash them with a fork for about 30 seconds.
- Transfer the mashed fruit to a fine-mesh strainer and press the fruit into the strainer allowing the juice to drip into a bowl below.
- This should make 3 to 4 tablespoons of juice.
- Discard the pulp/seeds.
🍴 Serving Suggestions
You can serve these just as they are, or add a dollop of homemade whipped cream (or store-bought cool whip) on top. They would also be fun with some sprinkles for a kids birthday party.
⏲️ Storage
Place the bars into an airtight container with a lid and keep them in the refrigerator. They will last about 1 week.

Ingredients
For the crust:
- 8 graham cracker sheets finely crushed
- ¼ cup powdered sugar
- ½ cup butter melted
For the cheesecake:
- 10 strawberries medium sized
- 16 oz cream cheese softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- fresh strawberries for garnishing
Instructions
To make the crust:
- Spray an 8x8 baking pan with nonstick cooking spray and line with parchment paper.
- In a bowl, combine the crushed graham crackers, powdered sugar, and melted butter. Stir until well combined.
- Press the crust mixture into the bottom of your 8x8 baking pan using your fingers and give it a final press with the bottom of a cup.
- Freeze the crust for 10-12 minutes.
To make the cheesecake:
- While your crust is in the freezer, roughly chop the strawberries and place them in a microwave safe bowl. Microwave the strawberries for 25-30 seconds until warm and then mash them with a fork for about 30 seconds.
- Transfer the mashed strawberries to a fine mesh strainer with a bowl underneath. Press the strawberries into the strainer allowing the juice to drip into the bowl. This should make 3 to 4 tablespoons of strawberry juice. Discard strawberry pulp and seeds.
- Using a stand or hand mixer, cream together the cream cheese, and vanilla, adding 1 cup powdered sugar slowly on medium speed until smooth. Pour in strawberry juice and mix just until combined.
- Spread the cream cheese mixture evenly on top of the graham cracker crust. Freeze for 2-3 hours.
- Once frozen, transfer the cheesecake onto a cutting board. Using a sharp knife cut into squares.
- Garnish with a strawberry slice, best served immediately.
