Strawberry Oat Bars are the perfect bake sale or potluck dessert treat! They're quick and easy and a huge crowd pleaser for kids and adults!
So if you know me, you know that I like to try to be super mom. Of course, this also leads to my being frazzled and occasionally dropping one (or more) of the things I'm juggling. I can't help myself, though. I just like volunteering myself for things! Sometimes there is a great reward at the end, a kind thanks, big hug or smile. This time, I got all that, plus some yumminess to nibble on!
So in typical me fashion, I forgot until the last minute about baking for my son's open house last month. Opps. As I scrambled to find something to make, I realized we were out of eggs. Ugh. Not wanting to make an extra trip to the store, I decided to give this recipe a whirl. I'm so glad I did! The bars are so tasty, and super easy to make, too!
How to Make Strawberry Oat Bars
- First, preheat the oven.
- Grease a 9×13 pan with butter.
- Then mix together the oats, flour, sugar, baking powder, salt and cinnamon. Stir to combine. .
- Next, add the butter and use a fork to cut it into dry ingredients until the mixture resembles coarse meal and is no longer powdery.
- Set aside about half of the oat mixture; press the rest firmly into the prepared pan.
- Now you want to partially bake it until lightly browned at the edges, 13 to 15 minutes.
- Remove from the oven and carefully spread strawberry preserves over the partially baked oat layer.
- Sprinkle with reserved oat mixture.
- Bake until topping is slightly browned, 20 to 25 minutes. Set the pan on a rack to cool completely before cutting.
If you do have leftovers, store them in an airtight container for up to one week.

In the middle of making these and there are some missing details!! Oven temp? Pan size? You say to mix the dry ingredients but never mention when to add the vanilla - is it added to the oat mixture or the jam? Could you update this recipe? Thanks!
