I never have time for breakfast in the early morning. After Mr. Juggling Act and the kids are out the door for the day, I take a few minutes to myself and eat.

This strawberry parfait is one of my favorites to make. It’s super simple and easy, and really delicious. You can change up the fruit to whatever is in season or on hand, too.

Frequently Asked Questions

Is a parfait healthy?

If you use low-fat vanilla yogurt in your parfait, it will be a healthier breakfast or snack. Granola can be high-fat so be sure to read the label if you’re using store-bought granola.
Strawberries are sometimes considered a superfruit and for good reason, because they are loaded with antioxidants and low in calories. In addition, strawberries are an excellent source of vitamin C, folate, potassium and manganese.

Can parfaits be made ahead of time?

Yogurt parfaits can be made ahead of time and kept in the fridge for 3-4 days if you leave the granola out. The granola will get mushy if you put it with the yogurt too early. If you’re making these for school lunches or planning ahead, keep the granola separate until you’re ready to serve.
