I never have time for breakfast in the early morning. After Mr. Juggling Act and the kids are out the door for the day, I take a few minutes to myself and eat.
This strawberry parfait is one of my favorites to make. It's super simple and easy, and really delicious. You can change up the fruit to whatever is in season or on hand, too.
Ingredients
- fresh strawberries
- low-fat vanilla yogurt
- granola
Make up a batch of this Homemade Granola. It stores wonderfully and is delicious for breakfast in parfaits or smoothie bowls, as well as for dessert on ice cream, too.

If you use low-fat vanilla yogurt in your parfait, it will be a healthier breakfast or snack. Granola can be high-fat so be sure to read the label if you're using store-bought granola.
Strawberries are sometimes considered a superfruit and for good reason, because they are loaded with antioxidants and low in calories. In addition, strawberries are an excellent source of vitamin C, folate, potassium and manganese.
Yogurt parfaits can be made ahead of time and kept in the fridge for 3-4 days if you leave the granola out. The granola will get mushy if you put it with the yogurt too early. If you're making these for school lunches or planning ahead, keep the granola separate until you're ready to serve.



Variations
- Add other berries such as raspberries, blueberries, and blackberries for more flavors and textures.
- Chopped pecans or slivered almonds are a great addition to fruit parfaits also, plus they're good for you!
- Mini chocolate chips are the perfect addition if you want a little extra sweetness in your parfait.

- Pint-sized Mason Jar
Ingredients
- 1 cup low fat vanilla yogurt
- 1 cup granola
- 1 cup strawberries hulled and sliced
- wheat germ honey optional
Instructions
- In a pint-sized mason jar, layer half of the ingredients, starting with the yogurt, followed by granola and top with strawberries. Repeat with the remaining half.
- If desired, sprinkle the top with wheat germ and a drizzle of honey.
- Serve immediately.
