Ingredients

  • cauliflower florets
  • kosher salt
  • onion powder
  • garlic powder
  • paprika
  • can cheddar soup
  • cream of chicken soup
  • shredded mozzarella cheese
  • shredded sharp cheddar cheese

If you like the flavor of curry, you can add a tablespoon of curry powder to the seasoning.

Storage

To Store: Leftover cheesy cauliflower should be stored in the fridge in an airtight container. It will keep for 3-4 days. (These are my favorite airtight containers.)

To Reheat: Microwave individual portions in 30-second intervals until heated throughout.

I do not recommend freezing this dish.

Slow Cooker Cauliflower Soup

This side dish can easily be turned into a main meal! This is the perfect soup for slow cooker season. Here’s how to make slow cooker cauliflower soup:

  • Start with the original recipe and then add 32 ounces of chicken stock or chicken broth (or use vegetable stock for a creamy vegetarian soup).
  • You can also add veggies like carrots, celery, onions, and potatoes if you like. It’s also a great way to use up leftover shredded chicken.
  • Just before serving, add 1 cup of milk or heavy cream and use a hand-held immersion blender (this is the one I use) to puree the soup.

Serving Suggestions

This cauliflower side dish is delicious just like it is, but for some extra creaminess add in a splash of heavy cream just before serving. I like this with some chopped green onions. You could also top it with bacon bits.

Ingredients

  • 2 medium heads cauliflower cut into florets
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 15 ounce can cheddar soup
  • 1 15 ounce can cream of chicken soup
  • 1 cup shredded mozzarella cheese divided
  • 1 cup shredded sharp cheddar cheese divided

Instructions

  • Prepare a slow cooker with nonstick cooking spray.
  • Place the cauliflower florets into the bottom of the slow cooker.
    2 medium heads cauliflower
  • In a mixing bowl, stir together the salt, onion, powder, paprika, soups, ½ cup mozzarella cheese, and ½ cup cheddar cheese. Spoon the mixture over the cauliflower.
    1 teaspoon salt, 1 teaspoon onion powder, 1 teaspoon garlic powder, 1 teaspoon paprika, 1 15 ounce can cheddar soup, 1 15 ounce can cream of chicken soup, 1 cup shredded mozzarella cheese, 1 cup shredded sharp cheddar cheese
  • Top the mixture with the remaining cheese.
    1 cup shredded sharp cheddar cheese, 1 cup shredded mozzarella cheese
  • Cover and cook on high for about 2 hours or until the cauliflower reaches desired tenderness.
