In our house, broccoli is usually only cooked one way – steamed, tossed with oil, vinegar and Italian seasonings, and eaten cold.  This is how my husband has been eating it since he was a little boy.  But here’s the thing, I don’t care for vinegar, and I really don’t like my food cold.

When he came home the other night to see me pulling broccoli out of the oven, I was already prepared for the look of skepticism I got.  I reminded him about the Bacon & Garlic Cauliflower Mash he didn’t want to eat but gobbled up, too!

Is roasted broccoli healthy?

Not only is broccoli high in fiber, low in calories and carbs, but it is also rich in vitamin C, K, and A, folate, calcium, and iron.

Is roasting vegetables better than steaming?

By roasting your vegetables, you will retain more of the nutrients than if you steam them.

Which oil is best for roasting vegetables?

I choose olive oil to roast vegetables because it allows the broccoli to become crisp without adding any flavor.

How to Make Broccoli in the Oven

  1. Preheat the oven to 400-degrees.
  2. Wash and chop the broccoli and pat dry with a paper towel. 
  3. In a large mixing bowl, toss the broccoli with the olive oil, garlic, salt, and pepper.
  4. Spread the broccoli out onto the sheet pan. (If you like you can line the baking sheet with tinfoil (for easier cleanup!)
  5. Roast until golden brown around the edges and crispy, usually about 10 minutes.  
  6. Sprinkle with Parmesan cheese and serve hot.
