I absolutely love using Cowboy Butter because it adds so much flavor. I pretty much always have some of this in my fridge or freezer (or both!) These crispy fingerling potatoes are super easy because all you have to is melt the butter, add a little olive oil, toss the cut potatoes in it and roast.

They come out of the oven with crispy edges, fluffy centers and loads of garlic and herb flavor. So, so good.

  • fingerling potatoes
  • Cowboy Butter
  • olive oil
  • salt and black pepper

🔪Instructions

  1. Preheat the oven to 400-degrees F
  2. Lightly grease a rimmed baking sheet.
  3. Cut the fingerling potatoes in in half lengthwise.
  4. Melt the butter in a microwave-safe small bowl.
  5. In a large bowl, toss the potatoes in the butter with olive oil.
  6. Add the potatoes to the baking sheet with the cut side down
  7. Roast for 25-30 minutes, turning the potatoes half way through, until the potatoes are fork tender and golden brown.
  8. Season with salt and pepper and serve hot.

Store leftover potatoes in an air tight container in the refrigerator for about 5 days. (These are my favorite airtight containers.)

You can reheat them in the microwave, but for best results, place them on a sheet pan in the oven set to 200-degrees F until they’re heated through. This way they will stay crispy.

However, the next time you make it, you might consider one of these different ways of making this great recipe.

  • Garlic Chive Butter and Garlic Basil Compound Butter are also both really delicious with these potatoes.
  • Add a little bit of smoked paprika for a smoky flavor, or a sprinkle of cayenne pepper for a little heat.
  • If you like, add a bit of fresh rosemary or other fresh herbs, or a sprinkle of parmesan cheese to the potatoes before baking.

🍴 Serving Suggestions

Honestly, I could probably just make myself a meal out of just these potatoes because they’re so good! However, you can make yourself a nice well-rounded meal like a grown up, too.

Serve these potatoes along with Grilled Lemon Chicken or Spicy Grilled Chicken and a side of Honey Glazed Baby Carrots for an easy weeknight meal.

Petite Sirloin Steak Recipe or Steak Bites with Garlic Butter also are delicious with these roasted fingerling potatoes and a side of Garlic Green Beans or Oven Roasted Broccoli.
