Growing up, my grandfather grew beets in his garden and we always had them as a side dish. (My grandfather also used the beet greens to make soup.)
Nowadays, I prefer to serve roasted beets, which are so delicious! Plus, you don't have to spend forever peeling the beets - just let the oven do the work for you!
We'll show you how to roast beets in the oven, which makes them sweeter.
Ingredients
You only need a few simple ingredients to make this delicious recipe:
- fresh beets
- olive oil
- onion (optional)
- fresh herbs such as thyme or rosemary (optional)
- salt and pepper to taste

Instructions
- Preheat oven to 375°F.
- Wash beets under cold water and cut off the top and bottom.
- Cut beets in half and toss with olive oil, salt, and pepper.
- Lay out a large piece of tinfoil.
- Wrap and seal the beets, onion pieces, and fresh herbs. (Or place beets in a greased baking dish and cover).
- Roast the foil package for 1 hour or until beets are tender when poked with a fork.
- Using rubber gloves or paper towels, rub the beets and the skins will just slide right off.

- Scrub beets to remove any dirt/debris.
- Trim off the tops and bottoms.

Storage
Store: Once roasted, leftover beets will keep refrigerated for up to a week. (These are my favorite airtight containers.)
Reheat: Microwave individual servings in 30-second increments.
Serving Suggestions
Serve with butter, salt, and pepper, if desired. You could also serve them with compound butter like garlic chive butter, steak house butter, or cowboy butter.
