There are only a handful of simple ingredients for this healthy side dish:
- raw carrots
- butter
- garlic cloves
- salt
- fresh ground pepper
- fresh parsley, thyme, or rosemary for garnish (optional)

🔪 Instructions
- Preheat oven to 425 F.
- Grease a rimmed baking sheet with cooking spray and set aside.
- Cut up the carrots.
- Toss the carrots with butter and garlic.
- Season with salt and pepper.
- Transfer carrots to the prepared baking sheet, placing them in one single layer.
- Roast carrots for 22 to 25 minutes or until they are browned and tender.
- Remove from the oven and transfer to a serving plate.
- Taste for seasonings and adjust accordingly.
- Garnish with fresh chopped parsley.

To Store: Leftover carrots can be stored in the fridge for 4-5 days in an airtight container. (These are my favorite airtight containers.)
To Reheat: Microwave individual portions in 30 second intervals until heated throughout.
