Low Carb Broccoli Casserole uses a homemade creamy cheese sauce instead of traditional casserole ingredients like condensed soups and bread crumbs to provide this casserole with so much flavor! This light and healthy casserole recipe has fewer carbs and calories but is as easy to make!
With just a few minutes of prep work and about 20 minutes in the oven, you’ll have an easy and delicious side or light meal your whole family will love.

- shredded cheddar cheese (I like sharp cheddar cheese the best)

- Place broccoli and water in a bowl with salt and black pepper to taste.
- Microwave for 4-5 minutes until broccoli is tender; then drain.
- In a large bowl, beat together the cream cheese, sour cream, and ranch dressing; fold in the broccoli.
- Transfer the broccoli mixture to a greased baking dish; top with shredded cheese.
- Bake for 15-20 minutes at 350 F.

To Store: Leftover Low Carb Broccoli Casserole can be stored in an airtight container for 4-5 days in the fridge. (These are my favorite airtight containers.)
To Reheat: Microwave individual portions in 30-second intervals until heated throughout.
📖 Variations
The first time you try any new recipe we recommend that you make it just as it is written on the recipe card since that is how the recipe has been tested. However, the next time you make our recipe, you might want to try one of these ideas:
- If you prefer, use mozzarella cheese instead of cheddar.
- If you're not a fan of ranch dressing, substitute heavy cream or heavy whipping cream instead. You'll want to add additional seasoning as well such as garlic powder and onion powder. Creamy Italian dressing is also a good substitute for the ranch.
- Garnish with chopped green onions, if desired, for some freshness.
- This recipe can also be made with fresh cauliflower.
- For a little heat, add a pinch of red pepper flakes.
If you're not worried about carbs, check out these ideas:
For a little texture, make a quick mixture of panko breadcrumbs or crushed ritz crackers and grated parmesan cheese (¼ cup each) seasoned with garlic powder. Mix with 1 tablespoon melted butter, and drizzle over the top of the casserole before baking.
My brother-in-law adds crushed pork rinds to the top when he makes it.

- 1 bag fresh broccoli florets 32 ounces
- ½ cup water
- Salt and black pepper to taste
- 1 package cream cheese 8 ounces, room temperature
- 1 cup sour cream
- ½ cup prepared ranch dressing
- 2 cups shredded cheddar cheese divided
Instructions
- Preheat your oven to 350 degrees.
- Spray a 9x13 casserole dish using nonstick cooking spray.
- In a large bowl that is microwave safe, add the broccoli and water.1 bag fresh broccoli florets, ½ cup water
- Season the broccoli with a little salt and black pepper.Salt and black pepper
- Cover the bowl with plastic wrap or a vented lid, and microwave on high for 4-6 minutes, stirring halfway.
- Cook until the broccoli is tender, and drain well. Excess water will make the casserole soggy.
- Place the tender broccoli into the prepared baking dish.
- In another large mixing bowl, beat the cream cheese, sour cream, and ranch dressing until well combined.1 package cream cheese, 1 cup sour cream, ½ cup prepared ranch dressing
- Add half of the cheese and season with salt and pepper.2 cups shredded cheddar cheese
