    This is one of the best casseroles to make that your entire family will love. It is the perfect recipe for busy nights because the prep time for chicken hashbrown casserole is so quick!

    Many recipes use cream of chicken soup, but in this loaded version we're adding sour cream, and cream cheese instead!

    Hashbrown chicken casserole is an awesome comfort food dish and a delicious recipe for potlucks, too. Let's get cooking!

    Here is what you will need to make this cheesy chicken hashbrown casserole.

    🧂 Ingredients

    • Store-bought or Homemade Ranch Seasoning Mix
    • Diced chicken breast, Pulled Chicken, or store-bought rotisserie chicken
    • bacon
    • shredded cheddar cheese and Monterey jack cheese
    • cream cheese
    • sour cream
    • butter
    • water
    • frozen hash brown potatoes
    • sliced green onions (optional)

    🔪 Instructions

    1. Preheat oven to 350-degrees F.
    2. Lightly spray or grease a baking pan.
    3. In a large bowl combine the cream cheese and half of the shredded cheese.
    4. Mix together the sour cream, ranch dressing mix, half of the crispy bacon, melted butter, and water.
    5. Then, stir in the cooked chicken and the frozen hash browns.
    6. Transfer the mixture into the prepared baking dish.
    7. Bake for 30 minutes, then remove from the oven and top with the remaining cheese and bacon.
    8. Return to the preheated oven and bake for an additional 20-25 minutes until the top is golden brown and the casserole is bubbly.
    9. Garnish with sliced green onions, if desired.

    🍲 Storage

    To Store: Keep leftovers in an airtight container in the fridge for 3-5 days. (These are my favorite airtight containers.)

    To Reheat: Microwave individual portions on high in 30 second intervals.

    To Freeze: Prepare the casserole and cover with aluminum foil. Be sure to label. Frozen casserole is good in the freezer for 3-4 months.

    To Thaw: Allow to thaw in the fridge overnight.

    ✏️ Make Ahead

    This easy casserole recipe can be made a day ahead and kept in the fridge until you're ready to bake it.

    📖 Variations

    The first time you try any new recipe we recommend that you make it just as it is written on the recipe card since that is how the recipe has been tested. However, the next time you make our easy chicken hashbrown casserole, you might want to try one of these ideas:

    • To make Buffalo Chicken Hashbrown Casserole, add buffalo wing sauce to the
    • Sprinkle a cup of corn flakes, bread crumbs, or crushed butter crackers on top of the casserole before baking for an added crunch.
    • Add chopped veggies to the dish like chopped onion or bell pepper. Mixed veggies like corn, carrots, peas or broccoli are a great addition also.

    🍴 Serving Suggestions

    Top individual servings with green onions and additional sour cream and bacon - afterall, it is a loaded casserole!

    My favorite side dish to serve with this is Garlic Green Beans, Broccoli, or a light sala. Add some rolls for an quick meal. This fruit salad is an easy side dish, too.

      As I am a Pescatarian I use Morningstar Veggie Bacon & Quorn Chicken alternative pieces in this recipe. Also, I like using a 5-Italian Cheese Blend of shredded cheeses in a lot of my recipes but kept to the Monterey & Sharp Cheddar for this one.

      I have a casserole similar to this with ham! I'd love to try it with chicken and especially the added ranch dressing. It really sounds so rich and creamy. Anything is better too with bacon added!
