This is one of the best casseroles to make that your entire family will love. It is the perfect recipe for busy nights because the prep time for chicken hashbrown casserole is so quick!
Many recipes use cream of chicken soup, but in this loaded version we're adding sour cream, and cream cheese instead!

- Store-bought or Homemade Ranch Seasoning Mix
- Diced chicken breast, Pulled Chicken, or store-bought rotisserie chicken
- bacon
- shredded cheddar cheese and Monterey jack cheese
- cream cheese
- sour cream
- butter
- water
- frozen hash brown potatoes
- sliced green onions (optional)
- kosher salt and black pepper

🔪 Instructions
- Preheat oven to 350-degrees F.
- Lightly spray or grease a baking pan.
- In a large bowl combine the cream cheese and half of the shredded cheese.
- Mix together the sour cream, ranch dressing mix, half of the crispy bacon, melted butter, and water.
- Then, stir in the cooked chicken and the frozen hash browns.
- Transfer the mixture into the prepared baking dish.
- Bake for 30 minutes, then remove from the oven and top with the remaining cheese and bacon.
- Return to the preheated oven and bake for an additional 20-25 minutes until the top is golden brown and the casserole is bubbly.
- Garnish with sliced green onions, if desired.

🍲 Storage
To Store: Keep leftovers in an airtight container in the fridge for 3-5 days. (These are my favorite airtight containers.)
To Reheat: Microwave individual portions on high in 30 second intervals.
To Freeze: Prepare the casserole and cover with aluminum foil. Be sure to label. Frozen casserole is good in the freezer for 3-4 months.
To Thaw: Allow to thaw in the fridge overnight.
Tips
Use slow cooker shredded chicken or grocery store rotisserie chicken to cut down on prep time.

As I am a Pescatarian I use Morningstar Veggie Bacon & Quorn Chicken alternative pieces in this recipe. Also, I like using a 5-Italian Cheese Blend of shredded cheeses in a lot of my recipes but kept to the Monterey & Sharp Cheddar for this one.
