I hate heating up the kitchen in the summertime, which is why we grill often.

It’s easy to remember you can make your proteins on the grill (hello, steak!) but we don’t always remember we can make an entire meal on the grill – sides included.

When I came up with this recipe for what I call the BEST grilled potatoes, I knew I had to share it with you. It’s so simple and delicious. If you add toppings like bacon and sour cream, you could skip the entree entirely!

I know that once you try these, you won’t want to make your sides indoors anymore.

Shopping List

  • Russet potatoes
  • Yellow onion
  • Mushrooms
  • Butter
  • Oregano, thyme, basil
  • Seasoned salt and pepper
  • Your favorite toppings: bacon, cheese, sour cream, etc

If you like, you can serve these potatoes with crumbled bacon, shredded cheese, sour cream and chives, too.

How to Make Foil-Grilled Potatoes

  1. Heat grill to medium-high heat
  2. Lay 4 pieces of aluminum foil on tray or cutting board (for easy transport to the grill)
  3. Wash and cut potatoes, place on foil
  4. Add onions and mushrooms (if desired) on top of potatoes
  5. Cut butter into pieces and add one Tablespoon on top of each packet
  6. Combine seasonings in a small bowl
  7. Sprinkle on ½ teaspoon seasoning to each packet
  8. Grill over indirect heat for 20-30 minutes or until potatoes are tender

What type of potatoes are best for grilling?

You can grill just about any potato, but I prefer heartier varieties like Russet or Yukon Gold. Starchier is better, and cooking them in foil means a creamy texture.
