✔️ Before you shop, check your grocery store’s website. You may find coupons or specials to help save you money. Are chicken thighs on sale? Substitute them for chicken breasts to make the honey garlic chicken. Buy an extra-large package of ground beef and divide it yourself for the meatloaf and hamburger casserole – bulk sizes are most often cheaper. A little planning can go a long way toward saving you money, and that adds up at the end of the month!

✔️ Clean your produce when you get home from the store. Prep ingredients like diced onions and chopped carrots ahead of time so you just need to grab a container when it’s time to cook – it’s like having a sous chef! This will especially save you time this week when you’re making the sweet potato soup and sheet pan chicken dinner.

✔️ Keep your prepped foods fresh by using quality airtight containers – these are my favorite. Plus, these are great for leftovers, too.

Monday – Shrimp Scampi

Tuesday – Sweet Potato Soup

This is one of my mama’s favorite recipes –sweet potato soup.

It’s super tasty with a dollop of sour cream and crispy bacon, but you could also add a pile of these cheesy ranch tater tots on top!

Talk about a great way to get kids to eat their veggies!! 😊

Wednesday – Instant Pot Meatloaf

You’re going to love this super simple meal of instant pot meatloaf.

While the instant pot cooks the meatloaf, whip up a batch of our red skin mashed potatoes and your favorite veggie side like garlic green beans, cowboy baked beans, or crispy roasted sweet potatoes.

If you prefer, a fresh salad like our winter citrus salad or even roasted beet salad is also a great side.

Thursday – Chicken Sheet Pan Dinner

I love sheet pan dinners, and this Chicken Sheet Pan Dinner is no exception. It’s simple and easy, and you don’t have to babysit it. Plus, clean up is a breeze!

What could be better than that!

Use your favorite seasoning mix or try it with one of ours like Mediterranean spice blend, Italian seasoning, Ranch, or even our Cowboy Seasoning Mix.

Friday – Cheesy Hamburger Casserole

Cheesy hamburger casserole is like the best hamburger helper you’ve ever eaten – with no mystery ingredients!

It’s full of flavor and only takes 35 minutes from start to finish so it’s great for busy weeknights and a great addition to weekly menu plan 39.

Saturday – Million Dollar Chicken Casserole

Serve with rice or noodles for a complete meal.

Breakfast – Sweet Potato Bread

If you’re not a fan of quick bread, try our Raspberry Cream Cheese Muffins or Blueberry Muffins instead.

Snacks – Pretzel Bites

I just adore this semi-homemade recipe for pretzel bites. It’s super easy when you start with premade dough!

Whip up a batch of honey mustard dipping sauce to go with them and you have a fantastic snack!
