Ingredients

  • Puff Pastry: I like to use refrigerator puff pastry instead of the frozen version because I find it to be easier to work with.
  • Pepperoni: Any type of small sliced pepperoni will work.
  • Mozzarella Cheese:
  • Pizza Sauce: You can use store-bought or homemade pizza sauce or tomato sauce.
  • Egg and Water: The egg wash will help the crust brown, adding texture and flavor.
  • Italian Seasoning: You can use either store-bought or homemade Italian seasoning mix – usually a blend of dried herbs and spices like onion powder, basil, garlic powder, oregano, etc.
  • Grated Parmesan Cheese: You can use the kind of cheese that comes in a canister in the dry goods aisle. However, freshly grated parmesan is more flavorful and melts better.

Ang’s Tips

✔️ If you have the time, pop the tray of pizza pockets into the fridge for 15-20 minutes. Cold puff pastry will bake up flakier!

✔️ It’s important that you have a tight seal on the edges of the pastry so the filling doesn’t leak out.

Storage

To Store: Store your baked homemade pizza pockets in the fridge in an airtight container or ziplock bag.

To Reheat: Reheat individual pockets in the microwave for 30-45 seconds.

To Freeze: These pockets can be made ahead of time and frozen. Assemble the pockets, but stop when after you seal them tight. (Don’t add the egg wash).

To Thaw: Allow the pockets to thaw in the fridge overnight. Brush with egg wash mixture, sprinkle with cheese, and bake as directed.

    Make Ahead

    Homemade hot pockets can be made 1-2 days ahead of time. Leave them right on the baking sheet, cover them with plastic wrap, and refrigerate until ready to bake.

    Variations

    The first time you try any new recipe, we recommend that you make it just as it is written on the recipe card since that is how the recipe has been tested. However, the next time you make our recipe, you might want to try one of these ideas:

    • for appetizers, cut the dough into ten small squares instead of 6 and reduce the amount of cheese and pepperoni in the filling (mini pepperoni works great for this)
    • use pesto instead of tomato sauce
    • add any of your favorite pizza toppings as part of the filling:
      • ham, ground sausage, and chopped-up meatballs or bacon for meat lovers
      • pineapple and ham
      • green peppers, onions, black olives, and mushrooms for veggie lovers
      • extra cheese with provolone, mozzarella, parmesan, and asiago

    These homemade hot pockets can also be made with pizza dough if you prefer.

    Ingredients

    • 1 package Puff Pastry
    • 24 pepperoni slices
    • 2 cups shredded mozzarella cheese
    • 1 cup pizza sauce or tomato sauce
    • 1 egg beaten with 2 tablespoons of water
    • 1 teaspoon store-bought or Italian seasoning mix
    • 2 tablespoons grated parmesan cheese

    Instructions

    • In a small bowl, beat the egg with water with the Italian seasoning mix. Set aside.

    • Roll out the puff pastry dough.

    • Cut the pastry into 6 squares.
    • Spoon a little bit of tomato sauce onto the puff pastry. Be sure to avoid the edges.
      1 cup pizza sauce or tomato sauce
    • Add cheese, pepperoni, and more cheese.
      24 pepperoni slices, 2 cups shredded mozzarella cheese
    • Gently fold the dough over to make a triangle pocket.
    • Use the back of a fork to pinch the edges shut tight so that none of the filling leaks out.
    • Brush the pocket with the egg wash seasoning mixure and sprinkle with a little bit of grated parmesan cheeese on top.
      2 tablespoons grated parmesan cheese
    • Repeat with the rest of the puff pastry until you have 6 pockets.
    • Bake for 25-30 minutes at 350F until golden brown.
    • Remove and serve with tomato sauce for dipping, if desired.
