There’s something about mini pizzas that is just so fun! These BBQ Chicken Mini Pizzas are no exception. You’ll love how easy they are to make. I like to get a a rotisserie chicken from the grocery store and shred the meat – it’s quick and easy!

BBQ Chicken Mini Pizzas
BBQ Chicken Mini Pizzas

Ingredients
- 12 Rhodes dinner rolls
- 1/2 cups cheddar cheese grated
- 2 cups shredded chicken
- 1 cup BBQ Sauce divided
- Granulated garlic
- Dried parsley
- Fresh chives for garnish optional
- Thinly sliced red onions optional
Instructions
- Thaw Dinner Rolls (see package directions). Preheat the oven to 350 degrees. Line your baking sheets with parchment paper. Using your hands, gently stretch dinner rolls into a flat circle. Poke holes using a fork to avoid bubbles. Sprinkle with granulated garlic and dried parsley.
- Partially bake for about 10 minutes until the rolls are cooked through. Do not overbake! While the dough bakes, prepare the chicken. Mix together 3/4 cups of BBQ sauce with the chicken and set aside. (Reserve the rest of the BBQ sauce).
- Spread each roll with a scant teaspoon of BBQ sauce. Add the BBQ chicken and sprinkle with cheese. Bake for 10- minutes at 350 degrees until the cheese is melted and the crust is slightly golden brown. Sprinkle with fresh chives, if desired.

Many BBQ chicken pizzas call for thinly sliced red onions. My family doesn’t care for them, but if yours does, add them into the chicken and BBQ sauce mixture for a little extra flavor.
You can use a store-bought BBQ sauce, or make your own. I try to have some of this Homemade Sweet & Spicy BBQ on hand. It really makes the pizzas so delicious!
