Bacon cheeseburgers are, of course, a classic burger, when it comes to comfort foods, and these sliders take all of those delicious things you love about a burger and put them into a slider.

You are going to love these amazing sliders! The best part about this recipe is that you don’t have to stand over a hot grill to make these. They’re baked on sheet pans! Honestly, these are so quick because you don’t have to make individual patties. Just mix it all up, assemble, bake, and serve with your favorite burger toppings!

Mini cheeseburgers are always a hit, whether you’re feeding a crowd or looking for an easy dinner to make for your family on a busy weeknight. These are picky-eater approved and great for either an appetizer or a main dish. These easy sliders are such an easy way to feed a crowd – like for your next game day party.

Ingredients to make bacon cheese sliders.

Ingredients

This is meant to be a brief overview of the recipe. For step-by-step instructions and a full printable recipe card with ingredients, please scroll down to the teal box below.

  • Ground Beef: I use 80-905 lean ground beef. You want some fat so the burgers are juicy, but not so much that they’re greasy.
  • Worcestershire Sauce: Enhances the flavor of the beef and adds umami.
  • Seasoned Breadcrumbs: Helps add a little body to the burger patties.
  • Onion: This should be finely diced. If you’re not a fan of onions, leave them out.
  • Garlic: Freshly minced garlic adds the best flavor to the sliders.
  • Parmesan Cheese: Grated Parmesan adds a nutty, salty note to the burgers.
  • Fresh Cheeses: Slices of Muenster cheese and Colby or Monterey Jack cheese make these the gooey cheeseburgers everyone craves. You can use your favorite cheeses for these sliders, such as American cheese, but these would also be delicious with Pepper Jack or even blue cheese crumbles.
  • Slider Rolls: Use your favorite mini buns like Hawaiian Rolls or pretzel buns. If you have leftover compound butter, I highly recommend buttering the rolls and broiling them for just a minute or two until golden brown. Cowboy Butter is my favorite for this.
  • Bacon: Cooking the bacon on a sheet pan saves time, and the clean up is much easier if you line your pan with foil. You can use any sort of bacon you like. My husband loves thick-cut cut, while my sister normally uses turkey bacon instead.

* Note: Ground beef should always be cooked to an internal temperature of 160°F according to FoodSafety.gov.

Variations:

  • If desired, you can swap out the ground beef for ground chicken, ground pork, or ground turkey for a leaner burger. You will not need to cook the meat as long, however.
  • Add 2 tablespoons Homemade Ranch Seasoning Mix or Magic Dust Rub to your beef mixture before cooking for additional seasoning.

Ingredients

  • lb 80-90% lean ground beef
  • 3 tablespoons Worcestershire sauce
  • 1/4 cup seasoned breadcrumbs
  • 1/4 cup onion finely minced
  • teaspoon finely minced garlic
  • 4 ounces sharp Parmesan cheese grated
  • freshly ground black pepper
  • 4 slices cheddar broken in half
  • 4 slices Colby or Monterrey Jack cheese broken in half
  • 12 slider rolls
  • 12 slices of bacon, cooked

Instructions

  • Preheat the oven 400-degrees F.
  • Line a rimmed baking sheet with aluminum foil.
  • Arrange the bacon on the baking sheet.
    12 slices of bacon, cooked
  • Cook the bacon in the oven to your desired crispiness, about 15-20 minutes.
  • Meanwhile, in a large bowl, blend together beef, Worcestershire sauce, grated cheese, breadcrumbs, onion, black pepper, and garlic. Do not over mix.
1½ lb 80-90% lean ground beef, 3 tablespoons Worcestershire sauce, 1/4 cup seasoned breadcrumbs, 1/4 cup onion, 1½ teaspoon finely minced garlic, 4 ounces sharp Parmesan cheese, freshly ground black pepper
  • Line a second baking sheet with aluminum foil. Add the beef mixture to the tray and press it down until it's about 1/4 inch thick all the way around.
  • Bake the beef for 20 minutes to be medium-well. Remove the pan about half way through to drain off any excess fat.
*For these sliders, I recommend medium-well to well-done.*
  • Remove the cooked bacon and set onto a plate or platter lined with paper towels to absorb the grease.
  • Remove the beef from the oven and use a sharp knife or even a pizza cutter to cut the beef into 12 even square 'burger patties'.
  • Cut the rolls in half and place the bottoms onto a third baking sheet.
  • Place a 'burger patty' onto each bottom roll, top with Colby or Monterrey Jack cheese and Muenster cheese. (You could also use Muenster, American or pepper jack).
4 slices cheddar, 4 slices Colby or Monterrey Jack cheese, 12 slider rolls
  • Cut the bacon slices in half and add 2 halves to each burger.
  • Place the tray of sliders into the oven for 2-3 minutes so that the cheese can belt.
  • Add the other half of the slider buns to the top of the burgers.
  • Serve hot with lettuce, tomato, ketchup, mustard, etc on the side.

Notes

For best results, use 80% lean or better ground beef.
Tip – If you cannot find sliders with sesame seeds, you can get sweet Hawaiian rolls. Then, brush the tops of the rolls with melted butter and sprinkle sesame seeds on top.
Ground beef should always be cooked to an internal temperature of 160-degrees F according to FoodSafety.gov.

Back Story:

Want to know what my pregnancy craving was with Olivia? It’s cheeseburgers, and these Bacon Cheeseburger Sliders come pretty close to perfection!

These are awesome for cookouts, game day and all kinds of parties.  In fact, I craved cheeseburgers so much, that my mom made sliders for Olivia’s ‘baby sprinkle!’

Olivia is a big cheeseburger-lover now, too! These little sliders are just the right size for the kiddos – they’re easy for little hands to hold and bite!

We made these last night for dinner, although they were full size burgers, not sliders. My review… ⭐⭐⭐⭐⭐ This is the only way we will do burgers from now on. They were absolutely amazing.

I made these for game day and everyone loved them. I used American and pepper jack cheeses on mine though and I served them with your burger sauce on the side.
