What is Donkey Sauce?

If you’re a Food Network nut like me, you have probably watched a couple (hundred) TV shows with celebrity chef Guy Fieri. From “Diners, Drive-ins, and Dives” to “Guy’s Grocery Games” these shows are some of our family favorites. We recently just finished “Guy’s Chance of a Lifetime” – a reality show where the winner received the keys to their own Chicken Guy restaurant.

Donkey Sauce is a quintessential ingredient at Chicken Guy, and for good reason – it tastes amazing. his sauce is tangy and garlicky in all the best ways! If you’ve ever had garlic aioli at your favorite restaurant, then I know you’ll love this tasty garlic sauce.

Here’s my copycat version of Guy Fieri’s Donkey Sauce recipe.

  • roasted garlic – roasting garlic makes it a little sweeter
  • mayonnaise – adds body and creaminess
  • Dijon mustard – more pungent than yellow mustard

What does Guy Fieri’s donkey sauce taste like?

This creamy mayonnaise-based sauce has a bold tangy flavor. The sauce is the perfect combination of sweet, sour, bitter, and salty – also known as Umami.

Is there a shortcut for roasting garlic?

Yes! You can skip the oven and ‘roast garlic’ in the microwave if you’re in a time crunch. Here’s how:
1. Cut the top of the garlic head off to expose the cloves.
2. Place the garlic bulb into a small dish and add water almost to the top of the garlic.
3. Drizzle olive oil on top of the exposed garlic cloves.
4. Cook in the microwave at 40% power for 5 minutes. (Cooking time may vary. My microwave is 1000 watts.)

✔️ If you have time, allow the sauce to chill in the fridge for a few hours or overnight. Trust me, the flavor will be even more incredible!

🍲 Storage

To Store: Leftover donkey sauce stores wonderfully. Place it into an airtight jar or container. It will last 5-7 days in the fridge. (These are my favorite airtight containers.)

I love that I can easily double or triple the recipe and store extra sauce in the fridge for later use.

📖 Variations

The first time you try any new recipe we recommend that you make it just as it is written on the recipe card since that is how the delicious recipe has been tested. However, the next time you make our recipe, you might want to try one of these ideas:

Put your own spin on our copycat recipe by adding a dash of hot sauce or a sprinkle of cayenne pepper.

You can also add a little bit more acidity by adding a teaspoon of fresh lemon juice.

  • Combine the cooled roasted garlic into a small mixing bowl and mash with the back of a fork.
    ⅓ cup roasted garlic
  • Whisk the remaining ingredients with the mashed garlic until well combined.
    1 cup mayonnaise, 1 teaspoon dijon mustard, ½ teaspoon Worcestershire sauce, kosher salt and black pepper
  • Taste for seasoning and adjust as needed.
  • Serve immediately or cover and chill in the refrigerator until you are ready to use it.
