Is there anything better than fresh citrus in the summertime? I just love any excuse to add a bit of lemon zest or lime zest to a dish, or a splash of fresh grapefruit juice to a cocktail.
This time, I'm adding fresh lime to the mayonnaise. Now, I know this might sound like an "interesting" combination, but I promise you'll love it. It might just end up being your new favorite condiment.
There's something quite satisfying about dressing up a store-bought mayo, which is usually made with egg yolks, oil, and either vinegar or lemon juice. This is so easy peasy that I almost can't call it a recipe!

You only need a few simple ingredients to make your own lime mayo.

- lime
- salt and pepper
- fresh cilantro. green onions, or parsley (optional)
I prefer parsley or green onions in this recipe simply because I don't care for the flavor of cilantro. However, if you are a fan, go for it! You can also omit the herbs if you want.

For Chipotle Lime Mayo - Stir in ½ teaspoon dried chipotle powder, or add 1-2 chipote peppers in adobo sauce to your food processor and combine with the mayo, lime juice and zest, and herbs. Pulse to incorporate.

🍴 Serving Suggestions
Lime mayo is a great addition not only to sandwiches and wraps, but also potato and pasta salads, or even cole slaw! Try it with tuna or egg salad, too. It's fantastic with burgers and great for dipping french fries.
