Blueberry and Apple Muffins are the perfect on-the-go breakfast and a fun mix of summer and fall flavors. This is a great muffin recipe for picky eaters or if you’re just looking for a sweet muffin recipe to try. - all-purpose flour
- brown sugar
- sugar
- baking powder
- ground cinnamon
- salt
- fresh blueberries
- eggs
- milk
- butter
- vanilla extract
- fresh apple

🔪 Instructions
- Preheat your oven to 375 degrees.
- Prepare your muffin tin with muffin liners with a light spritz of cooking spray.
- Combine the dry ingredients in a large mixing bowl and mix in the blueberries.
- Create a well in the center of the flour mixture and set aside.
- In another separate bowl, whisk together the eggs until foamy.
- Next, add the rest of the wet ingredients and mix until well blended.
- Stir in the apple.
- Add your wet mixture to the dry mixture all at once. Stir until the ingredients are moistened. The muffin batter will be lumpy.
- Divide your batter between the prepared muffin cups filling each one almost to the top.
- Bake for 18-20 minutes or until muffins are golden brown and a toothpick comes out clean.

🍲 Storage
To Store: Leftover muffins should be stored in an airtight container. These can be kept at room temperature, however, if it is humid I suggest you keep them in the fridge. (These are my favorite airtight containers.)
To Freeze: Wrap each muffin in plastic wrap or aluminum foil. Place all the muffins into a large resealable bag. Label and freeze.
To Thaw: Remove one or more muffins and place in the fridge to thaw overnight.

You can substitute a third of the all-purpose flour for whole wheat flour if you prefer. Of course, this recipe can also be made with 1:1 gluten-free flour.
