When it comes to brunch, it’s nice to have one big dish like Sweet Potato Spinach Quiche or this croissant bake as a centerpiece to your spread. It’s especially awesome if the dish is a make-ahead recipe and you don’t have to spend all morning in the kitchen! Personally, I’d prefer to sip mimosas with my guests instead. Wouldn’t you?

Everyone knows that blueberries are healthy and delicious, of course. I cook with them a TON for these exact reasons. These Easy Blueberry Oat Muffins are a big favorite around here! While you can use pretty much any fruit for this tasty make-ahead breakfast bake, blueberries are kind of the star. I hope you enjoy it!

Blueberry Croissant Breakfast Casserole

🧂 Ingredients

I use store-bought croissants, but if you’re ambitious and want to make your own, check out this tutorial from Sally’s Baking Addiction: How to Make Croissants.

Instructions

  1. Preheat the oven to 350F and grease a 2 qt casserole dish
  2. Tear the croissant into pieces
  3. Sprinkle the berries over the top
  4. Use an electric mixer to beat the cream cheese for 1-2 minutes, until softened
  5. Add the sugar, eggs, vanilla extract, and milk and beat
  6. Pour the cream cheese mixture over the berries
  7. Bake for 35-40 minutes, until the croissants are golden brown

  • 4 large butter croissants
  • 1 1/2 cups frozen berries
  • 8 ounces cream cheese
  • 2/3 cup sugar
  • 2 eggs
  • 2 teaspoon vanilla extract
  • 1/2 cup milk

Instructions

  • Preheat the oven to 350F and grease a 2 qt casserole dish
  • Tear the croissant into pieces and place in the casserole dish
    4 large butter croissants
  • Sprinkle the berries over the croissant pieces
    1 1/2 cups frozen berries
  • In a large mixing bowl, use an electric mixer to beat the cream cheese for 1-2 minutes, until softened
    8 ounces cream cheese
  • Add the sugar, eggs, vanilla extract, and milk and beat until blended
    2/3 cup sugar, 2 eggs, 2 teaspoon vanilla extract, 1/2 cup milk
  • Pour the cream cheese mixture over the berries
  • Bake for 35-40 minutes, until the croissants are golden brown and the center doesn't wiggle

  • Serve warm

Notes

Optional: Prepare the casserole and refrigerate overnight. Place in a cold oven and set to 350F and bake for 40-45 minutes.
Berries: we used 3/4 cup each of strawberries and blueberries
