One of my favorite appetizers to get when we go out to eat is Spinach or Queso Dip. I love anything that’s cheesy! I wanted to make my own queso dip at home, but I’m not a fan of the Velveeta cheese. With only a little extra effort, you can have a cheesy delicious dip ready in no time that is amazingly flavorful.
Ingredients:
1 tablespoon olive oil
1/2 lb lean ground beef
2 tablespoons Mild Taco Seasoning Mix
1/4 cup yellow onion, diced
1/4 cup green bell pepper, diced
2 jalapenos, seeds removed and diced fine
1/2 cup Tequila
1/2 cup shredded Monterey Jack cheese
1/2 cup shredded yellow cheddar cheese
1/2 cup shredded Manchego cheese
1/2 cup canned diced tomatoes, drained
Directions:
Heat a skillet over medium heat and cook the onions, bell and jalapeno peppers until tender. Add the ground beef and increase the heat to high. Sprinkle the taco seasoning over the beef and brown, then drain off the grease.
In a saucepan over medium heat, bring the tequila to a simmer. Slowly stir in the cheeses, making sure it is incorporated before adding more. When the mixture is smooth and creamy, add the diced tomatoes and season with salt and pepper. Stir in the meat mixture until well combined.
Transfer the queso to a serving dish. Serve immediately with tortilla chips for dipping.
