Weekly Meal Plan 40
Weekly Meal Plan 40 is packed with yummy casseroles, our favorite slow cooker soup recipe, and the best pork tenderloin dish. You’re going to love this week’s recipes!

Here is your free Weekly Meal Plan for the second week of October, with ideas for breakfast, snacks, and desserts, along with dinner for every night of the week.
Monday – Steak Bites and Potatoes

This is one of our family favorites! Steak bites and potatoes are super easy to make and great for ‘date night’ at home, too.
Serve with garlic green beans, honey glazed carrots, or oven roasted broccoli.
If you’re watching your carbs, make Loaded Cauliflower Mash instead of potatoes.
Tuesday – Million Dollar Chicken Casserole

You won’t spend a lot to make this million dollar chicken casserole, but it does taste like a million bucks!
It’s creamy and cheesy with a crunchy topping. You can add frozen veggies into the chicken mixture before baking, or serve it with a salad.
Wednesday – Slow Cooker Potato Soup

This slow cooker potato soup is perfect for cold Fall nights. I love topping mine with crispy bacon and shredded cheese.
You can serve up big bowls and make this your whole meal, or with a side sandwich like our turkey pesto panini or toasted caprese sandwich.
Thursday – Cheesy Meatball Casserole

I adore making this super easy casserole. Whether you use homemade or store-bought meatballs, you’re going to love it!
Our meatball casserole recipe includes instructions for baking the meatballs with pasta, zucchini noodles, or just alongside garlic bread.
Friday – Over Roasted Pork Tenderloin

Baked pork tenderloin is our most popular (and my favorite) way to make pork tenderloin. I always stock up when it’s on sale!
Serve along with crispy smashed potatoes, red skin mashed potatoes, sweet potatoes with brown sugar, or roasted sweet potatoes.
Saturday – Sesame Chicken

This easy stovetop sesame chicken is a cinch to make and ready in about 20 minutes!
Toss your favorite veggies like carrots, broccoli, pea pods, or mushrooms for a quick stir fry.
I like to serve this yummy chicken with rice or noodles.
Try our mandarin orange salad with the leftover sesame chicken – so good!
More Asian-inspired recipes:
Sunday – Taco Stuffed Shells

Who says it has to be Tuesday to have tacos? And who says you can’t have all the goodness of tacos, with pasta?
These taco stuffed shells are SO good and your family is definitely going to ask for seconds! Serve with a side of chips and pico de gallo, homemade guacamole, or your favorite salsa.
Breakfast – Sheet Pan Pancakes

These sheet pan pancakes are our most popular breakfast recipe – and for good reason!
They’re super simple to make and you don’t have to spend all morning standing over the stove.
And if you’re family likes pancakes, try this pancake bundt cake to shake up your routine!
More Breakfast Ideas:
Snacks

When it comes to entertaining, I love making one big snack board with lots for everyone to choose from.
Whether you’re looking for a traditional meat and cheese board or something a little more out of the box, I’ve got you covered.
My fruit and cheese board with apple toffee dip (left) is always a big hit, and if you’re having a Halloween get together, try my Halloween boo board.
Game Day Grub
Dessert

This slow cooker apple cobbler might just be the easiest dessert recipe, ever.
But if apples aren’t your cup of tea, try our pumpkin puff pastry twists (super tasty with this creamy fruit dip) or spice cupcakes with cream cheese frosting.
