Welcome to Meal Plan 25 for the last week of June with delicious and easy recipes for the whole family.

When I make this menu, here’s what I’ll do:
✨ Make a big batch of slow cooker chicken at the start of the week with about 4lbs of chicken, and you’ll breeze through at least two dinners—use it in the chicken broccoli pasta bake and the chicken broccoli potato casserole.
✨ Double up on the crispy salt and pepper chicken while you’re at it—you can toss the extras onto a chopped salad later in the week. (Work smarter, not harder, right?) You can also use leftover grilled chicken if you prefer.
✨ And don’t forget to mix up a batch of my Cowboy Spice Rub—it adds serious flavor to meals like corn casserole, petite sirloin, cowboy burgers, and more. A little prep now = bold flavor all summer long. (It also make a great little gift for friends, family, and new neighbors!) You can choose to grab a packet of fajita mix at the store, or make my chicken fajita seasoning mix. Ingredients for both these mixes are included in the printable grocery list.
Mealtime doesn’t have to be stressful. A little planning and a few simple hacks can make a huge difference—because real-life cooking should be quick, easy, and delicious.
Monday – Cowboy Baked Beans

Hearty cowboy baked beans are loaded with bold flavors and lots of bacon.
You can make them in your slow cooker, a Dutch oven and even on the grill.
Serve with top sirloin steak or grilled lemon chicken and a pan of this yummy cornbread on the side.
Tuesday – Salt and Pepper Chicken

If you like a little heat, you’ll love this crispy salt and pepper chicken. It’s made with Chinese five-spice powder, as well as red and green chili peppers
It’s delicious with rice or noodles. If you’re watching your carb in-take, try it with zucchini noodles.

Sunday – Potato Chicken Broccoli Casserole

This creamy potato chicken broccoli casserole casserole is perfect for using leftover grilled chicken, pulled chicken, or rotisserie chicken.
Tip – save some bacon from Monday’s baked beans to add to this casserole.
