You’ve probably heard of avocado toast, but have you ever had an avocado grilled cheese? Avocado and cheese are a heavenly pair and add a nice fresh taste to your grilled cheese sandwich.
Made in nearly the same amount of time, this avocado grilled cheese recipe is an easy way to add healthy fats to a traditional grilled cheese sandwich.

🔪 Instructions
- Place one and a half cheese slices on one side of the bread.
- Place a half-sliced avocado seasoned with salt, pepper, and smoked paprika on top of the cheese.
- Top the avocado with another one and a half slices of cheese and top with the other slice of bread.
- Repeat these steps for the second sandwich.
- Butter the outward-facing slices of bread.
- Place on a griddle over medium heat and cook for 1 to 2 minutes or until the first side is brown.
- Flip the sandwiches and tent with aluminum foil, reducing the heat to medium-low.
- Cook until the second side is brown and the cheese is melted.
- Cut the sandwiches in half and serve!

- 4 slices sourdough bread
- 6 slices Colby-Jack cheese
- 1 ripe avocado seeded and sliced thin
- 3 tablespoons salted butter room temperature
- Smoked paprika to taste
- Salt to taste

Instructions

- On top of the cheese, place half of the sliced avocado.1 ripe avocado

- Repeat these steps for the second sandwich.
- Butter the outward facing pieces of bread.3 tablespoons salted butter
- Place a griddle over medium heat. When the griddle is hot, put the sandwiches onto the griddle and allow to cook for 1 to 2 minutes or until the first side is brown.
- Flip the sandwiches and tent with aluminum foil, reducing the heat to medium low. Cook until the second side is brown and the cheese is melted.
- Cut the sandwiches in half and serve immediately.
