Weekly Meal Plan 32: It’s nearly Fall, and this week my Slow Cooker is earning its keep! We’ve got pork roast, chicken, sweet potatoes, and even short-cut lasagna on the menu. We’re eatin’ good this week!

✔️ Make an extra-large batch of grilled bacon. You can use it on your meals for both Monday and Tuesday.

Breakfast – Apple Carrot Bread
Weekend cooking is where it’s at when it comes to meal planning, at least for me. I love making quick breads, especially. They’re great for breakfast and snacks, too.

This Apple Carrot Bread is moist and delicious and full of yummy Fall spices. However, our Apple Streusel Bread Recipe is the one my friends beg me to make. You will not regret trying this one either!
If you can find bacon on sale, grab two packages and follow our guide on how to grill bacon.
Of course, it’s zucchini season, too, and you can’t go wrong with our chocolate chip zucchini bread!

Monday – Garlic Brown Sugar Chicken

This garlic and brown sugar chicken is so amazingly flavorful! My family literally cannot get enough of it.

Tuesday – Chicken and Broccoli Stir Fry

Wednesday – Apple Bacon Spinach Salad

Apple Bacon Spinach Salad is simple but so good. It’s got a light lemon-shallot vinaigrette and is topped with bacon.
(Hint, hopefully, you save some leftover grilled bacon!)
I love my carbs so I like to have some Buttery Dinner Rolls, Cast Iron Cornbread, or something else on the side.
If you love salads, you have to check out our BLT pasta salad, too. And you won’t be disappointed by this orange poppy seed dressing, either!
Thursday – Chicken Stuffing Bake

This new Chicken Stuffing Bake recipe is quickly becoming a fan favorite!
What’s not to love about a delicious meal you can make in about half an hour?!?
The crunchy stuffing on top is my favorite, but the creamy sauce is a close second.

Friday – Slow Cooker Pork Roast with Apples

Slow Cooker Pork with Apples is just such a great meal any night of the week. It’s impressive for company, but simple enough to make on a weeknight, too.
I often add carrots to the crockpot with this meal, but you could make honey glazed carrots on the side.

Saturday – Strip Steak Tacos

Grab some strip steak, flank steak, or skirt steak (whatever is on sale) and make these flavorful steak tacos.
Serve them up with Pico de Gallo and Homemade Guacamole and your other favorite taco toppings.

Sunday – Crockpot Huli Huli Chicken

Pull out your slow cooker again because tonight it’s Crockpot Huli Huli Chicken.
This is one of those dump-and-go kinds of meals that’s just so easy to throw together. (Find more 15-minute prep meals here).
Serve it with rice or noodles and a size pineapple mango salsa or purple cabbage slaw.
Plus, leftovers are yummy in quesadillas, tacos, fried rice, and salads.
Snacks – Mango Fruit Leather

You’ll be pleasantly surprised by how easy it is to make your own fruit leather.
This recipe is for mango, but you could use other fruits like nectarines, or peaches, or make blends with strawberries or apples.
This is a great school snack, and I love having it on hand.
Dessert – Pumpkin Butterscotch Cookies

These Pumpkin Cookies with chocolate and butterscotch chips are so soft. They’re just divine!
If you’re not ready for pumpkin yet, try these Chocolate Chip Toffee Cookies instead – they’re my mom’s favorites.
I’m also totally in love with these raspberry oat bars – they’re so good (and so easy, too!)
📅Food Holidays
These might not mean much at all, but I think they’re kind of fun. It’s also a good chance to talk with kids about different foods, where they come from, and any cultural significance. Consider adding one or two of these recipes to your version of Weekly Meal Plan 32.
