Tips for Cooking Steak

  • For a good, hard sear to seal in the juices and carmelize the steak, pat it dry with paper towels. Place it over high heat and don’t move it around; let the outside develop a little crust of flavor!
  • Allow your steak to rest for at least 5 minutes so that the juices have time to redistribute throughout the meat.
  • Always cut against the grain (muscle fibers) for a tender bite every time.

How Long Should I Cook Steak?

How long to cook a steak depends on how you like your beef cooked and the size of your steak; however, it is a good place to start:

  • 4 minutes per side for medium-rare
  • 5 minutes per side for medium
  • 6 minutes for medium-well

The best way to cook a steak is not by time, but by temperature. I highly recommend a meat thermometer to check the precise temperature of the steak. I have both this Bluetooth thermometer and this inexpensive instant-read thermometer and both work great for checking the level of doneness.

What Temperature Should Steak Be?

The USDA recommends cooking steak to a minimum internal temperature of 145°F and letting it rest for at least 3 minutes—this gives you a medium doneness, which is how Mr. Juggling Act likes it. I go a bit further and pull mine at around 155°F for a little extra cook on the inside!

Steak Doneness Chart:

  • Medium Rare: 145°F
  • Medium: 160°F
  • Well Done: 170°F
