I think I can honestly promise that this is the best grilled vegetables recipe I’ve ever tasted. It’s a simple recipe, perfect for beginners and experienced cooks alike, but sometimes simple means simply scrumptious. That is the case with these Mediterranean grilled vegetables for sure.

We love seasonal veggies at our house because they are the best bang for your buck. They’re less expensive than vegetables that are out of season, and they are the most nutritious too.

Ingredients

You only need a few simple ingredients to make grilled Mediterranean vegetables:

  • bell peppers
  • asparagus
  • zucchini and yellow squash
  • extra virgin olive oil or avocado oil
  • kosher salt
  • black pepper

What are the best vegetables for grilling?

You’ll want to choose vegetables that are hearty and contain less water – sorry, but you’ll have to skip the tomatoes. Our favorites are corn, zucchini, asparagus, and peppers.

Can you grill frozen vegetables?

The short answer is yes, but you’ll want to grill them in foil packets since they will contain more liquid than fresh vegetables. And remember my tip from above – hearty veggies that don’t contain high amounts of water are best.

What spices go well with vegetables?

Ingredients

  • 1 pepper
  • 12 Handful of asparagus
  • 1 summer squash (yellow squash)
  • 1 zucchini
  • 2 tablespoons olive oil or avocado oil
  • kosher salt to preference
  • black pepper to preference

Instructions

  • Preheat the grill to medium-high heat.
  • Place the veggies onto a baking sheet.
    12 Handful of asparagus, 1 summer squash (yellow squash), 1 zucchini
  • Brush the oil and seasonings onto the veggies on all sides.
    1 pepper, 2 tablespoons olive oil or avocado oil, kosher salt, black pepper, 2 tablespoons Mediterranean seasoning mix
  • You can use a grill basket or place the veggies directly on the hot grill.
  • Plan to place the veggies going across the grates so they are less likely to fall down through the openings.
  • Cook the squash and peppers for about 4 minutes per side and roll the asparagus a few times to ensure the tips won’t burn.
  • Remove the veggies from the grill when they reach the tender level you prefer.

Notes

For the asparagus – look for ones that are fairly consistent so they will cook evenly.
About the peppers – we used a flame pepper-but don’t be worried if you see these at the store, they aren’t spicy at all, they just happened to be a bell pepper that is striped orange and red and looks fiery. You can use red bell pepper or any color instead if you like.
