Short on time? Grab a rotisserie chicken or make this healthy pulled chicken in your crockpot. You can use extra chicken to make tomorrow’s meal!

January 22 – Chicken Tortilla Soup

Chicken Tortilla Soup ready in 30 minutes? You betcha! This is one of my family favorites and we have it almost once a week in wintertime!

Again, you can use pulled chicken or rotisserie chicken. You can even make this with ground turkey or ground beef if you want.

January 23 – Pork Carnitas

Instant Pot Pork Carnitas are one of my most favorite recipes and a fun twist on taco night.

If you don’t have an instant pot, you can make the pork in your slow cooker, then crisp it up in the oven.

Serve with once of these yummy salsa recipes or some homemade guacamole.

January 24 – Tuna Noodle Casserole

Feeling nostalgic? Try this Old Fashioned Tuna Noodle Casserole recipe. It’s creamy, cheesy, and crunchy – and just the perfect thing for when you need a warm comfort food meal.

Serve with a light salad or you can add in more frozen veggies if you want.

January 25 – Sweet Potato Soup

I love serving it with these cheesy ranch tater tots. You could also serve with Italian breadsticks or buttery dinner rolls for a complete meal.

Pasta with Sausage and Broccolini is another 30 minute meal the whole family loves.

You can make this with broccoli or broccolini, or any sort of veggies you like.

Add a little bit of parmesan cheese on top and serve with a light salad for a great weeknight dinner.
