- stuffing mix (such as Stove Top Stuffing)
- chicken broth (or water)
- chicken breasts (leftover chicken, rotisserie chicken, or shredded chicken all work also)

- sour cream

🔪 Instructions
- Preheat the oven to 400 degrees F.
- Lightly grease a 9x13 baking dish (or use cooking spray).
- In a large bowl, mix together the cream soup, sour cream, seasonings, mixed vegetables, and chicken.
- Spoon the chicken and soup mixture into the prepared casserole dish.
- Mix together the stuffing and hot water (or chicken stock).
- Spoon the stuffing mixture on top of the chicken filling.
- Bake until bubbly and crispy.

🍲 Storage
To Store: Leftover stuffing chicken casserole can be stored in an airtight container for 3-4 days in the refrigerator. (These are my favorite airtight containers.)
To Reheat: Individual portions can be reheated in the microwave.
To Freeze: Cover the casserole with foil and then place the whole dish into a 2-gallon freezer bag. Be sure to label it with the name, date, and baking instructions.
For best results, thaw and bake within 6 months.
To Thaw: Place the frozen casserole into the fridge and allow it to thaw overnight. Cover with foil and bake for 20 minutes. Then, remove the foil and bake for another 15-20 minutes or until the stuffing is crispy and the chicken filling is bubbly.

One of the best things about this stuffing and chicken casserole is that it is extremely versatile. Don't like peas? Leave them out. Love the flavor of sauteed onions? Add them in! Pretty much anything goes with this great recipe.

Since this stuffing casserole recipe reminds me a little bit of my mom's Chicken Pot Pie or Thanksgiving dinner, I like to serve it with tangy cranberry sauce. Sometimes I also serve it with garlic green beans and mashed sweet potatoes, but since this chicken casserole is so hearty, you don't really need to add anything else.
