Weekly Meal Plan 8 includes creamy tuna noodle casserole, garlic parmesan chicken, one-pan balsamic pork tenderloin dinner, honey butter chicken, and more. We’ve even got a make-once-and-eat twice slow cooker pulled pork with two ways to prepare it.

This month was full of surprises for us and I can’t say I’ll be sad to see it go. I’m ready for Spring and looking forward to St. Patrick’s Day and Easter!

Sunday – Honey Butter Chicken

Honey Butter Chicken is the sweet and savory chicken dreams are made of!
Serve with yummy with mashed cauliflower, brown or white rice, or mashed sweet potatoes. It would also be delicious with red-skin mashed potatoes, cauliflower rice, or even zucchini noodles.
Note: Try this yummy honey garlic butter sauce with pulled pork, shredded chicken or chicken tenders.
Monday – Tuna Noodle Casserole

Our classic tuna noodle casserole recipe is perfect for busy weeknights. It’s homey comfort food just like mom used to make!
Serve with a light salad, buttery dinner rolls, or butter swim biscuits.
Tuesday – Pulled Pork

Make this easy slow cooker pulled pork – it takes just 10 minutes to prep!
Use the pork to make sliders, tacos, or quesadillas.
You could also serve it with a fresh green salad. Be sure to check out this huge list of sides to go with pulled pork!
Wednesday – Lettuce Wraps

Use the leftover pulled pork to make these tasty lettuce cups piled high with crunchy veggies. It’s delicious with purple cabbage slaw, too.
This is a great low-carb meal that you can easily customize to suit everyone’s tastes.
Thursday – Spicy Mac and Cheese

If you’re a fan of cheese and bacon, Jalapeno Bacon Mac and Cheese. It’s got just a little kick to it.
Omit the bacon for a meatless meal option.
Serve with jalapeno biscuits on the side.
Friday – Garlic Parmesan Chicken

This creamy garlic parmesan chicken is an awesome quick and easy weeknight meal. You only need 30 minutes start-to-finish for this dish.
Serve with spaghetti, mashed potatoes, rice, or parmesan risotto with garlic knots on the side.
Saturday – Balsamic Pork Tenderloin

Easy Sheet Pan Balsamic Pork Tenderloin is a complete meal all on one tray. It’s a cinch to prep, and clean-up is a breeze, too.
I love that I can use whatever veggies I have on hand. It’s great with potatoes, sweet potatoes, green beans, broccoli, and cauliflower.
Too much pork this week? Try this Sausage Sheet Pan Dinner or Mediterranean Chicken Sheet Pan Dinner instead.
Breakfast

Breakfast enchilada casserole is a great recipe to make on the weekend and heat up on busy weekday mornings.
I also love to do a little baking and will be making these banana and carrot muffins.

Dessert

While this quick and easy Chocolate and Mint Bark is delicious any time of year, it is a super fun (and tasty!) way to celebrate St. Patrick’s Day
