1. Pancake Mix Muffins

Pancake Mix Muffins from Juggling Act Mama.
This recipe is ideal when you want to make a bunch of different-flavored muffins without destroying your kitchen! I love shortcut recipes, and this one-bowl muffin recipe is a reader favorite, too.
All you need to do is scoop the muffin batter into the muffin liners (or greased muffin tin) and then make different flavors with everyone’s favorite add-ins. Easy peasy, right?
2. Apple Blueberry Muffins

With about 8 grams of protein in each of these jumbo muffins, these are a great morning, noon, and night! My daughter likes to take one in her lunchbox to munch on after school, before her afternoon activities start.
These feel like a treat because of the chocolate chips, but they’re so much better than a store-bought snack that’s loaded with sugar!
7. Banana Raspberry Muffins

These are a fun twist on classic banana bread. You can use strawberries, blueberries, or even chopped cherries in these muffins if you don’t have raspberries on hand.

Ang’s Recipe Tips
- For a light and fluffy muffin texture, gently fold the dry ingredients into the wet ingredients and avoid overmixing.
- Toss fruit with a little bit of the flour before folding into the batter. This will help keep the fruit from all sinking to the bottom of the muffin.
- All of these recipes can be made with 1:1 gluten-free flour instead of all-purpose flour.
- The trick for tall muffin tops is to spoon the batter into every other muffin well, then allow the muffins to rest for 10-15 minutes in the muffin pan before baking.
What to Serve With Muffins
Of course, muffins with a little melted butter are always delicious! For brunch or parties, I like to serve sweet muffins with brown sugar butter. You can also offer jam and cream cheese. Find more flavored butter recipes with fruit, spices, and even bacon!
Storage
To Store: Leftover muffins will store in an airtight container for 3-5 days, depending on the recipe. (These are my favorite airtight containers.) I like to make a double batch and freeze half for later once they reach room temperature.
How to Freeze Muffins
- Let muffins cool completely before freezing.
- Wrap each muffin individually in plastic wrap or foil.
- Pop the wrapped muffins into a freezer-safe bag or container. (Don’t forget to label!)
- To thaw, just leave them on the counter for about an hour—or give them a quick 30-second zap in the microwave.
These easy muffin recipes prove that simple ingredients like flour, eggs, and fruit can turn into something truly delicious. Whether you’re baking for busy mornings or stocking your freezer with make-ahead breakfasts, these are the best muffin recipes to make life easier and tastier.
