In our house, we eat pork about once a week, which means we usually have leftovers. Whether it’s oven-roasted pork tenderloin or air-fried pork chops, I love using leftovers to make this easy casserole.

Ingredients

- Leftover Pork Tenderloin or Pork Chops – Cut into bite-sized pieces.
- Cream of Mushroom Soup – If you don’t care for mushrooms, you can use cream of celery, or make your own cream soup substitute.
- Sour Cream – You can use regular or low-fat sour cream.
- Shredded Cheddar Cheese – This casserole is also delicious with Monterrey Jack or Colby Jack cheese.
- Frozen Vegetables – I like to use a mix of peas, corn, and carrots, but you can use any veggies you like.
- Seasonings – garlic powder, kosher salt, and black pepper
- Egg Noodles (cooked) – Instead of noodles, use 1 ½ cups of cooked rice or cooked potatoes.
Variations:
- Add a little extra flavor by using a tablespoon of pork seasoning rub, Mediterranean seasoning, or Italian seasoning.
- If you have a few extra minutes, sauté 1 small onion in a skillet with butter until tender, then stir it into the casserole mixture before baking. This will add delicious flavor to the casserole.

Storage
To Store: Leftover Pork Casserole should be stored in the fridge in an airtight container. (These are my favorite airtight containers.) Stored properly, this will last 3-4 days.
To Reheat: Microwave individual portions in 30-second intervals until heated throughout.

- 3 cups cooked pork tenderloin diced
- 2 10.5oz cans cream of mushroom soup
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1½ cup frozen peas and carrots
- ½ cup frozen corn
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 12 ounces egg noodles cooked according to package directions
Instructions
- In a large bowl, make the sauce by combining the sour cream, cream soup, and seasonings.2 10.5oz cans cream of mushroom soup, 1 cup sour cream, 1/2 teaspoon garlic powder, 1/2 teaspoon salt, 1/2 teaspoon ground black pepper
- Fold in the vegetables, bite-sized pieces of cooked pork, and noodles.3 cups cooked pork tenderloin, 1½ cup frozen peas and carrots, 12 ounces egg noodles, ½ cup frozen corn
- Transfer the pork mixture to a greased casserole dish.

This recipe is amazing! Very easy, quick, and affordable to make and it goes a long way. I have made it 3 times in one month. I have made it two different ways. First way by the instructions and it was delicious. My kids each ate two plates! And just FYI my kids are very picky eaters, I feel like this is a very well rounded dish that can please the taste palette of just about anyone! The second way I cooked it was with some heat (sargento franks red hot cheese and Melinda’s jalapeno ranch sauce). And that version brought some heat to the table in the recipe.
