I really love making pasta because it’s quick, easy, and inexpensive. It also gets boring pretty quickly, which is why I’m always trying new things like chicken spaghetti and Greek spaghetti. Today’s recipe uses spaghetti leftovers with pasta sauce and lots of melted cheese – it’s so good!
This delicious leftover spaghetti bake is a fun new way to enjoy a second night of spaghetti! If you want to do something a little different from just tossing it in the microwave for a second meal, you’ll love how easy it is to throw everything together to make an entirely new meal the whole family will enjoy!

Here’s what you’ll need to make this leftover spaghetti casserole:
- leftover spaghetti with sauce
- eggs
- milk
- grated parmesan cheese
- shredded sharp cheddar cheese or mozzarella cheese
Variations
- Add 1-2 teaspoons of Italian seasoning or spaghetti seasoning to the spaghetti mixture before baking.
- For extra creamy baked spaghetti, add 1/2 cup of cottage cheese, cream cheese, or ricotta cheese to the milk and egg mixture before adding the leftover spaghetti.
- Add cooked ground beef, Italian sausage, or leftover shredded marinara chicken.
- Other cheeses that would work in this recipe are shredded gouda, gruyère, and fontina.
- Add some veggies to the pasta and spaghetti sauce mixture. One finely diced bell pepper or 1 cup of chopped baby spinach are great additions.

- If the leftover spaghetti noodles seem a little dry, add more marinara sauce.
- Use leftover spaghetti that has been refrigerated for up to 2-3 days for the best results.
Storage
To Store: Leftover Spaghetti Bake should be stored in the fridge in an airtight container. (These are my favorite airtight containers.)
To Reheat: Microwave individual portions in 30-second intervals until heated throughout.
To Freeze: Cover the casserole with plastic wrap or aluminum foil and then slide the whole casserole into a 2-gallon freezer bag. Be sure to label.
To Thaw: Allow the casserole to thaw overnight in the fridge.

Serving Suggestions
A green side salad is the perfect way to add some veggies to this hearty meal. When I have the time, I also serve garlic bread or Italian breadsticks.
You can also take it up a notch by serving it with meat sauce or this cheesy meatball casserole. (I love that this casserole can be made with homemade ground beef and pork meatballs, homemade chicken meatballs, or store-bought meatballs.)
Use leftover or frozen meatballs to make a batch of meatball cupcakes as a side dish.

Ingredients
- 8 cups leftover spaghetti with sauce
- 4 eggs
- ¼ cup milk
- ½ cup grated Parmesan cheese
- 2 cups shredded sharp cheddar cheese OR mozzarella cheese divided
Instructions
- Preheat the oven to 350 degrees.
- Spray a 9×13 casserole dish with nonstick cooking spray.
- In a large mixing bowl, whisk together the eggs and milk until completely mixed.¼ cup milk, 4 eggs
- Stir in the grated Parmesan cheese.½ cup grated Parmesan cheese
- Add the spaghetti to the bowl and toss the egg mixture until well combined.8 cups leftover spaghetti with sauce
- Add 1 cup of the cheddar cheese and toss until mixed.2 cups shredded sharp cheddar cheese OR mozzarella cheese
- Transfer the spaghetti to the prepared baking dish.
- Bake, covered, for 30 to 40 minutes or until the casserole is cooked through.
- Remove the cover and top the casserole with the remaining cheese.
- Return to the oven and bake for an additional 5 to 10 minutes or until the cheese has melted.

what if I don’t have grated parmesan cheese? What can I use instead?
Parmesan cheese can be substituted with asiago cheese or even Mexican cotija cheese. If you don’t have any of these you can use toasted breadcrumbs to add a little texture. For a vegan alternative, try nutritional yeast with ground walnuts or almonds.
