Meatballs are one of my favorite foods because they’re delicious, of course, but also can be adapted to fit so many different kinds of diets and lifestyles.

I making a big batch and freezing some and you will almost always find some sort of meatball in my freezer! I love that because then I can just take out a few at a time for individual meals or a whole bunch for delicious meal for the family.

Ang’s Recipe Tips

✔️ Use keto breadcrumbs, or substitute crushed pork rinds, almond flour, coconut flour, almond meal, or crushed nuts.

✔️ If your meat mixture is too dry, add a splash of milk

✔️ For uniform meatballs, I like to use a large cookie scoop.

✔️ If the chicken mixture is too wet, add a little bit more cheese or additional bread crumbs.

Storage

To Store: Store leftover cooked meatballs in an airtight container for 4-5 days. (These are my favorite airtight containers.)

To Reheat: Reheat in the microwave or on the stovetop in a large skillet with 1 tablespoon of water. Set the temperature to medium low and cover. The steam will help to warm the meatballs without overcooking them.

To Freeze: These meatballs freeze beautifully and are one of my favorite meal prep recipes! I like making a double batch and freezing half for another time. Here’s how to freeze them:

  • Allow the low carb meatballs to cool completely.
  • Place the sheet tray of meatballs into the freezer for one hour to flash freeze.
  • Then, place meatballs into a large freezer bag. Don’t forget to label it!

To Thaw: Remove from the freezer and allow your meatballs to thaw overnight in the fridge.

Variations

The first time you try any new recipe, we recommend that you make it just as it is written on the recipe card since that is how the recipe has been tested. However, the next time you make our easy keto chicken meatballs recipe, you might want to try one of these ideas:

  • Substitute ground turkey for the chicken.
  • For less spicy meatballs, omit the cayenne pepper and instead use black pepper. You can also add Italian Seasoning to the meatballs if you like.
  • Instead of fresh parsley, substitute your favorite fresh herbs like basil, thyme, or oregano.
  • If you’re not watching your carbs, you can use regular breadcrumbs.

Serving Suggestions

Serve your baked spicy chicken meatballs with marinara sauce, zucchini noodles or Baked Spaghetti Squash, and more parmesan cheese or mozzarella cheese for an easy low carb dinner.

These keto meatballs are also delicious drizzled with buffalo sauce and served with blue cheese over cauliflower rice or mashed cauliflower.

Ingredients

  • 1 pound ground chicken
  • 1 large egg
  • 3/4 cup grated parmesan cheese
  • 1/2 cup keto breadcrumbs
  • 1-1/2 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne powder
  • 1/2 teaspoon salt
  • 1/4 cup fresh parsley chopped

Instructions

  • Preheat the oven to 400-F.
  • In a large bowl, combine the ground chicken, parmesan cheese, keto breadcrumbs, egg, oil, fresh parsley, and seasonings.

Notes

Air Fryer Instructions

Instead of baking these ground chicken meatballs, you can cook them in your air fryer. Here’s how:
  1. Preheat the air fryer to 400F.
  2. Place the formed meatballs into the air fryer in a single layer.
  3. Turn the heat down to 380F.
  4. Cook meatballs for 12-14 minutes until browned and the internal temperature is 165°F in the center.
  5. Rest for 2-3 minutes before serving.
