Today, is my Dad’s 66th birthday! It’s the only day when everyone caters to Dad, because the rest of the time Dad goes out of his way to help other people. I wanted to make something special for him. I developed these German Chocolate Pie Cookies with lots of coconut and pecans.
These look impressive, but they’re actually really easy to make. If you love German chocolate cake, these are definitely for you. I used the cookie recipe from my Chocolate Chocolate Chip Mummy Cookies, and baked the cookies in a whoopie pie pan. This makes the cookies sort of come out like a pie shell.
Then I filled the middle with store bought frosting and topped them with chopped nuts, toasted coconut, and drizzled them with dark chocolate candy melts and caramel topping.
I told you they were easy – and oh so decadent! It’s kind of a mix between a cookie, and a brownie, and German chocolate cake. The nuts add a nice crunch and a savory element while the coconut and caramel complement the dark chocolate. You will not be able to eat just one.
