You’ve probably heard of avocado toast, but have you ever had an avocado grilled cheese? Avocado and cheese are a heavenly pair and add a nice fresh taste to your grilled cheese sandwich.

Made in nearly the same amount of time, this avocado grilled cheese recipe is an easy way to add healthy fats to a traditional grilled cheese sandwich.

  • sourdough bread
  • colby-Jack cheese
  • avocado
  • salt
  • black pepper
  • smoked paprika
  • butter

🔪 Instructions

  1. Place one and a half cheese slices on one side of the bread.
  2. Place a half-sliced avocado seasoned with salt, pepper, and smoked paprika on top of the cheese.
  3. Top the avocado with another one and a half slices of cheese and top with the other slice of bread.
  4. Repeat these steps for the second sandwich.
  5. Butter the outward-facing slices of bread.
  6. Place on a griddle over medium heat and cook for 1 to 2 minutes or until the first side is brown.
  7. Flip the sandwiches and tent with aluminum foil, reducing the heat to medium-low.
  8. Cook until the second side is brown and the cheese is melted.
  9. Cut the sandwiches in half and serve!

Ingredients

  • 4 slices sourdough bread
  • 6 slices Colby-Jack cheese
  • 1 ripe avocado seeded and sliced thin
  • 3 tablespoons salted butter room temperature
  • Smoked paprika to taste
  • Salt to taste
  • Black pepper to taste

Instructions

  • On one side of the bread, place one and a half slices of the cheese.
    4 slices sourdough bread, 6 slices Colby-Jack cheese
  • On top of the cheese, place half of the sliced avocado.
    1 ripe avocado
  • Season the avocado with salt, black pepper, and smoked paprika.
    Smoked paprika, Black pepper, Salt
  • Top the avocado with the remaining cheese, finishing with another slice of bread.
    6 slices Colby-Jack cheese
  • Repeat these steps for the second sandwich.
  • Butter the outward facing pieces of bread.
    3 tablespoons salted butter
  • Place a griddle over medium heat. When the griddle is hot, put the sandwiches onto the griddle and allow to cook for 1 to 2 minutes or until the first side is brown.
  • Flip the sandwiches and tent with aluminum foil, reducing the heat to medium low. Cook until the second side is brown and the cheese is melted.
  • Cut the sandwiches in half and serve immediately.
